Bringing Celeste on board was a genius move. A complete newbie asking questions that a seasoned canner wouldn't even think to tell you , assuming everyone already knows that , is the perfect combination. Please bring Celeste on more often.

Oh my goodness, perfect timing! Welcome Celeste! I just canned Chicken yesterday for the first time in my All American 921. Canned 6 pints, raw packed, for 75 minutes at 10lbs of pressure. Followed all instructions to the tee in my USDA Guide book. One of the jars didn’t seal, but the others look good. I am still struggling with getting over my own nervousness of opening a jar weeks or months from now! However, these videos are so extremely helpful for us newbies! Thank you!

Good for you!! I also have the 921, and I remember my first batch. It was Aldi potatoes. In case I messed up and ruined it, I figured potatoes were pretty cheap and it wouldn't be too much of a loss. 😄 I'm sure you did great! Nothing to fear! I'll tell ya, when I come in from a long day in the garden or running errands and my back is screaming, having a bunch of good, clean food on the shelf that's ready to heat & eat is such an enormous relief. I pulled a few all-nighters back in 2020 and canned a ton of ground beef. When I see the price of ground beef today, I feel like a champion knowing I've still got my $2/lb supply. 😊 Go and enjoy the fruits of your labor! Just listen for the "psst!" sound when you open the lid, and give it a sniff, and you'll be fine. Chicken tacos, chicken salad, chicken pot pie, the possibilities are endless! You'll be so glad to finally be over this last hump. Give yourself a pat on the back. Happy canning!

Congratulations! If they sealed, you'll be fine. I canned chicken years ago & it was the tastiest thing! And guess what-I only knew about water bath canning then, so they weren't even pressure canned. Thankfully, we didn't get sick or anything. I just recently leaned about pressure canning - and I hope to find a good price on chicken soon, because I'd like to have some more in the pantry.

Whatever you do resist the urge to put them in the fridge after they are done. If you over think and put them in the fridge because you are nervous about canning , you can’t then put them on the shelf.

Miss Rita I hope you can answer, it is possible to use two pressure canners at the same time in the same stove? I'm just asking because it will save time

@@ajangel604 I do outside but not inside because of my hood fan distance. If the hood was tall enough for my other canner on big burner in back I would. But I make sure to get one ready and going with pressure up and weight on before I start my 2nd one. I won't put my big canner on the small burners because I'm scared I can't regulate it as well. Also wouldn't be able to reach around it on the back burner to adjust temp.

@@ajangel604 if you're just starting then stick to one canner at a time until you do some of each kind of canning and feel comfortable doing it. Waterbath might be easier to double up on before the pressure canner. Best of luck and enjoy your canning

PRO TIP: As you're building pressure in your canner, remember to dial back (lower) your heat as you get closer to your desired pressure. Newbies often will maintain the same initial high heat until they reach their desired pressure, then they'll lower the heat but will be surprised to see that the pressure is still rising. That can lead to panic and fear, possibly leading them to do more drastic or dangerous actions like removing the canner from the heat source without lowering pressure, or removing the pressure regulator. Both of which can lead to siphoned liquid or broken jars.

@@kimladzik1500 Keep going, I promise you learned something valuable from that experience which will only add to your repertoire. I'll add this additional PRO TIP: If your pressure canner goes ABOVE your desired pressure, it's OK. All you have to do is slowly allow your canner to drop to (BUT NOT LOWER THAN) your desired pressure. I really do hope you not only continue to pressure can, but do it sooner than a few months from now lol.

My favorite video so far!!! As a woman about her age, I felt like I was being taught and mentored alongside her. So many of us long for Titus 2-like mentorship. In a way, this video satisfied that longing to be taught by godly and wise women. God bless you for soldiering on in this important work!

I want to personally thank you for all the videos. I bought a $40 dehydrator at Ollie’s and it hasn’t stopped working since I bought the dehydrator. You have given me such confidence to do these things. Keep up the good work.

I tried a dehydrator, but now I have discovered that food doesn't keep very long dehydrated, + freeze dried foods are the way to go for long term storage. But I can't afford one of those. It just proves to me that I only try things to find out they are really not preparing me for the long haul. Plus I wouldn't trust anything I preserved for long term use, using ANY method. Even my attempts at freezing food for long term storage has proven disastrous due to freezer burn. Trying anything new is becoming too disappointing +I'm about ready to quit trying to store food for long term use. I'll guess I'll have to try eating bugs+weeds when they shut off our food , but I'll have to be starving by then . I wish everyone who keeps trying new things all the best. It hasn't worked out for me so far. Sorry to be a Debbie Downer, but that's been my experience that nothing I've tried does what I think is going to be needed to meet the coming long term famine I have reason to believe is on the way bearing down on us like a freight train... God bless all of your efforts. All of mine so far seem to be cursed.

@@carolsanborn5332 It does last if you put in a oxygen absorber and vacuum seal. People in ancient times got by just fine with dehydrating food in the sun and storing it. That was all they had. We have so much more technology and options now. Why not use a canner if you don't want to dehydrate? Don't let fear deter you. If you're starving, you're going to wish you had freezer burnt food to eat or a jar of something edible. Starvation is horrifying and if you've never gone hungry before ( I have) you have no idea of the suffering that awaits you. It makes you psychotic. I hope you're at least storing water.

I always learn something from you. I am a retired RN and am a strong believer in sanitizing food prep surfaces. However I had never hear of Steramine. I have ordered it. Thanks for the tip.

I am processing my first batch of ground beef as I watch his video. You have helped me work myself up to start canning. I grew up watching & helping my Mom can but haven't done it myself until now. Mom always followed USDA guidelines & my dad was a USDA meat inspector, so I totally believe in following the tested guidelines. I appreciate your caution and good solid advice. I have the same canner you have! Cool.

I got that canner because of Pam. I only started pressure canning because she showed me the science and gave me the confidence to even try, let alone do as much canning as I have.

Good for you Isabel Good for you Isabel! I am 74 and started pressure canning in the beginning of May. I know exactly how you feel. Pam and Jim gave me the encouragement and confidence to get started. Got my USDA guidelines and canning book at my side-lots of reading! I Watch many Rose Red Homestead videos and also take notes! Actually did my first water bath canning of pineapple yesterday, came out great. Pray and commit your canning to the Lord 😉 . Blessing over you. You can do it!

If you just follow RoseRed Homestead directions on KZbin, you will find they are the best and safest on the internet. Ignore the others. You need to establish good canning habits and this site is the best! Good luck.

Get that canner out of the box and go for it. Keep everything clean, follow the instructions and you should be good to go. I let mine sit in the box for a year before I found these people on here. Rose Red Homestead, Linda's Pantry, Our Half Acre Homestead, Sutton's Daze, Kneady Homesteader, Bexar Prepper (not too active anymore, but her videos are great), Katz Kradul (no longer active, but great videos). There are many to choose from. You'll have a blast. If you ever want meal in a jar ideas for storage a lady named Perbain was a good one with lots of info. She has since passed away, but she was a good'ern. She had some great videos.

This is a great video. I appreciate your comment about using a stove-top pressure canner before using one of the electrical pressure canners. I have most definitely been leaning toward purchasing and electric pressure canner, but I see the logic in using the stove top version first… perhaps because I, too, am a teacher. Thanks so much.

How FUN!!! I have been canning for a few years now and I have younger friends say they wish their moms/grandmothers taught them. Honestly Mine didn't can and I bought a book. Several books . You can teach yourself too and it's So satisfying! Celeste is a lucky lady to have hands on instruction ! I know she'll enjoy the feeling of pride watching her storage shelves fill with the goodness she's provided

The BEST tutorial on pressure canning I’ve seen. Having a ‘newbie’ there doing it with you is genius! You were right there to answer questions as they came up and give reassurance. I’m bookmarking this vid for reference if either of my pressure canners ever arrive. One has been on back order since February and the other is being held hostage by the post office. They keep sending it to Dallas, then back to Pflugerville, then back to Dallas. Then . . . Nevermind. Thank you so much for this great tutorial!. The editing and photography are excellent, too. I haven't canned in 30 years, so you gave me the confidence I can still do it! Hubby even bought me a new pressure canner for this venture! The pulled pork sounds like a great place to start too.

And then proceeded to handle the pork and just " rinse" not once but twice & handled the oil bottle before washing their hands properly. Good way to get salmonella that is. You must wash your hands thoroughly with soap & water after handling meat of any kind , especially pork and chicken. I'm surprised to see her do this as she's usually so good!

absolutely wonderful :0)) great job Celeste for representing us newbies ;) , to Pam and Jim for the great content as usual :0) I have only been canning and dehydrating since the fall and I am still nervous but because of Pam's great instructions I now have an actual pantry with jars to choose from :0)) Syphoning still irks me lol but I now know what it is and have less and less since I first started. I look forward to updates from Celeste on her journey :0)

Did Celeste go and buy a canner? That was fun to watch someone learn for the first time! I wish I would’ve had someone teach me years ago! 😢. But I watched a bunch of KZbinrs and got the right books! For the past 4yrs., I’ve been putting up food from our garden and what not! Well done! ❤❤

Thank you for this video. I have been looking into pressure canning and was reading the Ball Blue book guide to preserving foods. You have answered my questions on how to do it. I learn by watching and this has been most helpful.

Lamb stew is my must have for the pantry. I save the tomatoes for homemade canned Manwich. I was lucky enough to find pearl onions by the hundreds at the discount farmers market. I simply drop a couple in each jar after they're peeled.

This is a fantastic video. The fun you had really contributed to the lesson. The cut motion with sound effects was hilarious as was the kitty litter scooper. I didn’t understand the reason for only putting 2 inches of water on the bottom and allowing part of the jar to be out of the water. I’m so grateful for this channel. You and Jim are the best 🥰
