We are busting out the pressure cooker presto 23 quart and trying to stay on top of all the squash and zucchini (and failing) but we are doing our best! Today we are pressure canning!

Stephanie loved the video. I am disabled so there is not a possibility to do this however I just love the way you explain the process of everything you do, I had a stroke and I sometimes have a hard time following along but you and Buddy both make it so easy for me follow. Thanks so much for your videos

I have never canned anything. I do remember my mom and aunt canning together when I was a kid. I know we had shelves of many different kinds of veggies and fruits in the shed or when we moved had them in the garage. This brings back a lot of memories. I just learned that it's a good idea to have the gauges tested because many of them are incorrect from the factory. And the important reason to remove the ring after 24 hours and before you store them is that if the seal breaks during storage with the ring on, you would not know the seal had broken. With the ring on a seal can break and then reseal from the pressure of the ring. For this reason, you should remove the band before storing, but 24 hours after sealing.

My mama would put the squash and onions together and then can them ... I grew up having to pick, wash, and cut pears so we could make pear preserves... you have become like Lester :) you make and EDUTAINMENT video :) Thanks Steph.

I have never canned squash. When I was married, we only grew Butternut and Buttercup squash. I only knew how to bake it and freeze it in gallon Ziploc bags. Last year I started eating Delicata squash. Stephanie, I love your zest for life and your family!!

Gosh, I remember many afternoon's at Mawmaw's house with the big pot on the stove with the little top piece jiggling and whistling away! She made the Very Best Vegetable soup! We would have to go down around the back side of the house (in rhe woods) and open the door to the underground cellar. We had to walk down the natural hewn steps in the dirt and grab a jar of her homemade soup that might have been down there for years! But it wasThe Best! Right out of her garden. Great memories! ❤❤❤

Love your videos & the way you explain everything. My mom and grandmother used to can tomatoes, pickles and other vegetables. Made dill &bread and butter pickles (sweet pickles) .I think I still have my mom's recipe. From "up north " (NY).. Never canned myself.

This brought back lots of memories….we always had a big garden and Momma either canned or froze everything! Yours looks really pretty and will certainly taste good this winter!

Have u try freezing them ! Just asking or look in ti freeze dryer I looking at a medium size one they say small one waste money ! They are expensive but when u grow your food and I buy in bulk a lot ! Cause I am in county we’ll worth it ! I like helping local farmer they help me save money as well. Thank for Great video

My mother and her family canned veggies, fruits, etc. I never have, due to fear and no experience. I was taught everything else, except canning and wished I had. Certainly will save this video, just in case I get brave 😁❤❤❤

I boil my lids, I find it seals. When I haven't boiled the the jars become unsealed.

Hey Steph. I somehow managed to can some pears many years ago. They turned out really well but it was a lot of work!! My grandmother used to can everything. They had a beautiful garden about the size of yours. She used to enter her cans in the local fair and won many blue ribbons for her pickled red beets, sweet/sour yellow string beans and her ChowChow. I would give anything for a jar of her string beans and beets right now!! I love the variety of your videos. Never know what we will see from one day to the next. How did Cayden do at his last game?? The reason the rings are removed is that you will not know if a seal has been broken at one time. If the rings are on it has the possibility of resealing and you will never know if the broken seal has allowed bacteria to enter the can.

You could blanch and freeze them. But canning will boil them in the jar so its pretty impossible to keep them crisp while pressure canning

I have a question for you if you don't mind. I was told I could not use an electric stove for pressure canning. I am assuming that is not true as you are using electric. My question is was I told wrong?

No not necessarily. Most modern pots now can be used on cooktops. The older models weren't designed for that.

I remove the rings, if the jar becomes unseal I will know, but if you leave the rings on and they become unsealed you will not know.

Canned every thing but squash always froze it but love seeing you can !When I canned pumpkin would take a wooden spoon an run down the sides an it would allow more in the jar !idolized salt also makes stuff soft learned that lesson many years ago !

Have you considered buying a dehydrator for preserving foods that would be safe to eat for a longer length of time versus canning?

Loved watching this video. It reminds me of all the years Dad and I would grow veggies then Mom and I would put the up either by pressure canning or freezing. I always enjoyed that and cherish the memories.

My mom would lay her lids in a flat pan layed a kitchen towel in botton then poured hot water over towel and layed her lids on towel. When ready she would put lids on jars with the rings. You would later hear popping sound the lids were sealing. Steph you bring back good memories watching you.

Reusing rings is what my family does and always new lids when canning but we do reuse the lids for use in the refrigerator or for pantry storage since a vacuum sill isn't needed then.

I am anxious to try to can things from my garden this year. I havent canned anything since i first married my husband 42 years ago. His Grandmother wanted to teach me. We went into the huge garden they had and picked about 10 sacks of pinto beans. After we shelled them all we proceeded to pressure can 55 quarts of pinto beans in a little farmhouse kitchen in August with no air conditioning. Never had the desire after that experience! Lol. She also had given us a bunch of canned goods when we first got married. She didn't make it clear that some of the things weren't sealed and canned. About 2 months after we were gifted the food i grabbed a jar of black eyed peas and opened them. Oh my gosh! I cant even explain the aweful smell that emanated from that jar! I guarantee that if we needed to gi to war with anyone that we could drop soured black eyed peas on them and they would surrender if they could while gagging!😂😂😂

Yes, as long as there are no nicks in your jar that may have caused the initial lid to not seal. You can re-can within 24 hours of original canning. If you think there's a problem with the jar, transfer your food to a new jar with new lids then do it all over again.
