Make sure you take the temperature of what the oil is at and cook at a lower temp with pressure cooking. KFC or any fried chicken chains using pressure cookers cook at a way lower temperature than your usual 350 or higher degrees with a regular pot frying. I would cook at a lower temp but longer cook time with the right, safe use at home pressure cooker.

You look at any KFC restaurant video, that's how they actually do it. Only the original flavor is pressure cooked. The spicy flavor is deep fried in an open fryer. The one thing he got wrong here is the initial marinating is not done with dry spices, it's a wet mix.

thy use to have egg n water/milk but bcz of contamination thy started using egg n milk powdrr in the flour mix so then thyd only need to dip in water

Pro tip: Try blending the spices and seasonings before adding to the flour for better distribution. Not only does it produces colorful specks of goodness but the flavor will be enhanced but will be so much more consitent!

Why use water during the dredging process? Isn't that just washing off the seasoning and better you just put on the chicken?

My only comment is that with a small cooker and so much oil there was a much higher risk than needed for that to explode. If you want to do this at home, use a large cooker, with a pressure vent, and you only need 2-3" of oil let the rest be air space as air compresses (causing the pressure) while liquids will not. Having the vent that releases at a specific pressure not only is big for safety in this case but allows all the moisture and steam to excape during the cooking process leading to a better product.

I use a pressure cooker for my beef but never frying chicken in oil..i'm scared like a mo fo. thanks for sharing i will try to fry chicken since you shared your video. I love fried chicken and juicy plus I see it's fully cooked through the joints and the skin is NOT burnt...

when I worked at Kentucky Fried Chicken/KFC the chicken went into the spiced flour then into the fryer at 375 open top until brown, then the top went down, the heat turned off. The chicken cooked with the residual heat while under pressure. 8 min I think?(it was over 40 years ago)

Quang, I've been trying fried chicken for years know, looked al lot of YT vids. I even copied your sweet-sour sauce. Let me tell you one trick I've learned and is really good... Don't use 100% flour but use a mixture of 70% flour and 30% corn starch. It really makes a difference.

Here's the original Kentucky Fried Chicken recipe: 8 cups flour 1 cup salt 1/2 cup of MSG 3 tbsp black pepper 1 tbsp white pepper 1 tbsp garlic powder 3 tbsp oregano 1 tbsp thyme 1 tbsp paprika 1 tbsp cayenne pepper 1 1/2 tbsp cumin Mix well and store in a tight jar or sealed bag, the longer it is stored the better it is. Clean chicken, wash and dry. Dip chicken parts into beaten egg. Shake/mix in bag and deep fry @350-400F for 10 minutes, or until brown, use own discretion depending on the fryer. Use only oil. Enjoy!

My reason for cooking fried chicken at home is to avoid all of the toxic seed oils like Canola and Soybean oil that all of the restaurants use. If you’re not cooking in animal fat, then there’s no healthful value add to your home frying efforts.
