I always enjoyed dulce de leche as a child. When made with the cans produced from Mexico, they have a very special taste. We used to remove the label from the can and boil the can when we made beans. When the beans were done, the dulce was done. This is so much faster for sure. Love it!

Years ago (late 70's!!) in NYC my Cuban Friend invited me to the BIG Family Sunday Dinner. I'll never forget the first time I tasted Dulce de Leche at her Mother's Home. After Dinner, Mrs "R". brought a large Saucepan right off the Stove & it had 12 Spoons laying all around the Pan. She then grabbed a trivet and set that Pan right in the middle of the Table. Mrs "R" didn't speak a lot of English but she noticed my puzzled face so tapped my arm & gestured, "Watch me". She reached over, grabbed a spoon, and gave it a deep twirl in the pot. Then she handed me the spoon like a Popsicle stick & gestured for me to take a large Lick. Everyone followed suit and each took the nearest spoon and we all sat around the Table, laughing and licking this incredible concoction. I swear it was THE most delicious thing I had ever eaten. I couldn't believe it. I was invited to the Family Dinner for many Sunday's over the next few years and Mrs "R" always made sure she made a large Pot of my favorite treat for, assuredly, her most appreciative Guest!

Actually, my mother has been making this for 40 years in a pressure cooker. I just made 4 cans this weekend. Just peel the label off, lay the unopened cans on their sides, on a strainer inside the pressure cooker, cover the cans with at least one inch of water, cook on high pressure for 12 minutes, removed from heat and allow the pressure cooker to depressurize and cool naturally. Delicious! Enjoy!

Another really good way to use this for a pie filling is to fold it into cool whip or a similar thing in an equal amount before putting it in the pie crust. The end result is fluffier and still very good.

This is the BEST!! I am so glad you showed us one to do *safely* instead of the possibly-explode-and-kill-you method, that is cooked in a sealed can! Mine turned out FANTASTIC! Although, I did go against your recipe a little by not letting it sit for 20 minutes. Let's be honest...I couldn't wait! I decided to just plunge ahead and hold the can with a towel and stir after waiting about 4-5 minutes. Turned out to be the best thing, because stirring helped get all that thick milk that settles on the bottom and in the crevices up; because it was still nice and super hot, which made it melt into the other milk on the top. As a result, it actually was almost perfectly smooth when all was said and done. Thanks for this awesome way to make it!

This was unbelievable - unbelievably easy and unbelievably yummy. We taste tested it without the vanilla extract and it so did not need a drop of it.Thanks for a fabulous recipe. We had it over cheesecake tonight. There's enough left over after covering the cheesecake that I have no idea what we'll do with it. I suspect it will disappear before that's decided.

I cook mine with the sealed can, and keeping the label on, because the glue will stick to the paper, I cook 5 at a time. For an hour for a darker color! I never had one explode yet, I fill till the water is above the top on the cans.

The reason he says no sealed can is because if you open a hot can right away it bursts and can give you burns, the worst part is sugar sticks so it burns into your skin and sticks. As I've been watching a bunch of recepe videos on this I've seen alot of people saying they have scares and burns. It's not that when you do it it has been safe you've just been lucky. If you wanna keep doing it its cool, I just didnt wanna not let you know and then get burned. Best wishes

Jessica Cecil it works, I use a pressure cooker so it only coos for an hours. And I keep the cans in the water, and pour cold water over it to cool it down, 30 minutes later and it ready to be used.

I've made this with sealed cans and with out trivet. You just have to fully submerge it under water. You'll here can rattling it took 30 minutes and I did a quick release

One reason many of us like alternate methods like the one in this tutorial is because of the explosion possibility with a sealed can. If you are willing to take that risk, that is fine but for many of us we prefer not to take that risk and love that there are other, safer ways to achieve the same goal.

You can cook as many cans that will fit, just don't take the kids off. If you cook with the kids on, you can store the caramel for as long as the expiry date on the condensed milk can. If you remove the lid like in this video, you have to eat within a few days.

You can but most of the flavor will evaporate because of the alcohol in the vanilla extract. If you used vanilla paste you def could and get a much tastier product.

It does work just fine -- until it doesn't. My neighbor also made hers that way for years with no issue until one day the can exploded. I love that we have safe alternatives for making dulce de leche, like the one in this video, that comes out just as delicious.

I grew up in Miami around Cuban families. We used to always make Dulce de Leche in the can -- it is NOT Caramel, as Caramel is made differently, by melting sugar with butter. I've made Dulce de Leche in the sealed can a dozen times in my Instant Pot with only one cup of water. I really don't see a need to remove the top of the can and then replace it with foil. I know a bunch of people who have done that and gotten water in their Dulce de Leche. The canning process involves pressure, so putting the can in a pressure cooker is not a problem. At worst, a defective can might break open -- in which case you would not want to eat it anyway.

Heating it up will thin it out enough to pour over something, as for frosting, use about 2 cups of powdered sugar, 1/2 tsp table salt, and add 2 tablespoons of caramel, add more as need for consistency.

I've never seen dulce de leche that lumpy and that runny. However, we make it inside the sealed can and just remove the paper label completely, turn the can on its side and put it into the pressure cooker (electric nowadays), add water going halfway up the can, and pressure cook it for 40 minutes. Once done, we let it cool for a couple of hours unopened and put it in the refrigerator for 4 hours or overnight and then open the can when it is cold. Alternately, you can leave it out at room temperature and it will keep for well over a month if unopened. Once opened, it should be refrigerated. The result of doing it this way is that the dulce de leche will be extremely smooth, thick and creamy. Dulce de leche does not require any other ingredients like vanilla extract or sea salt. It tastes delicious on its own. That is the way Cubans make dulce de leche and, in my experience, the way most Hispanics make it. That is not to say that your way is wrong or that it may not taste good the way you made it. But, personally, I wouldn't call what you made dulce de leche. More like dulce de leche sauce with vanilla extract and sea salt.

I've made this many times in a regular pot with boiling water, it takes hours, the longer you cook it, the firmer it gets. Let it cool in the can after cooking, then remove the other end of the can with a can opener and push the caramel out from the other end. It will come right out of the can keeping its shape. Slice and serve!
