I got some stale, old beans that I had serious difficulty "dialing" in with my barista express, (of course the grinder is not the best and there are better, but it can work OK with good beans In my experience), no matter how much I played with grind size, amount, and tamping, I just couldn't get high enough pressure at all. I decided to put in a dual wall/pressurized basket in, and WOW! Great pressure! Surely not the best espresso in the world, but I could absolutely, ABSOLUTELY, taste a difference, it was actually pretty good! Now I know what I can do with subpar beans, Hope is not lost!

Thats the same problem that i was having when i used mass produced beans ie Dunkin donuts etc. And the pressurized basket really did solve it. Only when i use fresh, locally and freshly roasted beans can i use the single wall.

I find with the pressurised basket you have to do much less work dialling in the optimum settings. You do get a crema but it’s very foamy. With the non-pressurised you have to get the settings spot on to extract at sufficient pressure and you get an extremely good, silky crema when you get it right

Is it all about the crema? Basically, is it accurate to say if you nail the crema, you nailed the espresso taste(bitter vs sour, aka over vs under extracted)? I bought my Bambino on January 19 and only started to transition to the non-pressurized basket 2 days ago.

The double wall filters are used to turn old coffee into a halfway decent shot with faked crema. The Crema is a sign of freshness due to the presence of CO2. When you have pre-ground or old coffee that’s been completely depleted of CO2 getting Crema extracted can be a huge challenge. That’s where the double walled filter comes into play. Not sure why Breville provides one as there is a built in grinder but I guess it’s in case you have pre-ground our old coffee.

I have the barista touch and I do agree, the single wall is a lot smoother. I called the customer service and they said any beans past the roasting date of 20 days it’s recommended they use the double wall. But I love the single wall.

I went to Italy 🇮🇹 last year with my best friend, we went to a different cafe on a daily basis, and one thing every cafe had in common was the way they prepared and served our espresso. We ordered double shot espressos - after they extracted the shot, they would skim off most, not all of the crema, and gently stir. They then served us our espressos with a small glass of sparkling water and told us to take a sip of water to cleanse the palette, then enjoy your espresso - taking little sips of water in between. I now do the exact same thing at home whenever I enjoy a delicious espresso.

The double wall also requires dialing in. I find that a pressurized setup requires a much courser grind. This is likely why it tastes more bitter in your test. I have the Saeco pressurized machine and I'm wondering if its worth upgrading: grinder and portafilter. Its an expensive proposition for what? More trouble and the same taste?

For the pressurized basket, I’ve found a slightly less finely ground coffee works better. I’m awaiting the arrival of a new grinder, but for now have determined that I can’t currently grind finely enough for espresso in a non pressurized basket, but when I use the same coffee in a pressurized one, it’s too fine. A slightly coarser grind gives more Crema and less bitterness.

Hello. Are you guys really warming up the sage barista express about 15 min every time before use or you make one blind shot to warm it up? Or you just wait until buttons stop blinking and then just pull a shot?Cause I don't really think it matters and affects taste and temperature of espresso because flowing hot water makes group head instantly hot so why should we waste more time or energy to warm it up? I get no pressure in the dial when I use the non pressurize basket. It doesn’t even touch the gray area. What am I doing wrong? I tried different settings to grind the coffee. Anything from 2 to 15. Nothing worked. The inside settings for the grinder are set to 6. Help needed. 😀

Question to Mr Hoon: When I use single wall I hardly get any pressure. The pressure dial hardly moves up no matter what I tried: changed the grind size between 1-3, used the freshest beans, tamped pretty strongly but nothing works. Does that mean the pressure valve is faulty. I do get good pressure (10-12) when I use the double wall. I hope you can suggest me what to do

Me too!! But only happens when I use single wall for double shot. Single shot works fine, but the single wall double shot basket never gives me the right pressure, it barely moves. I adjust everything, grind size between 1 and 5, beans and tamped it very hard or light. I wasted two bags of beans on this so I ended up using the double wall

I actually called Breville and spoke with someone and they told me there is not much of a difference between the two baskets. However, I have had sour shots with the dual-wall baskets.

I've got a cheap burr grinder and I don't get enough pressure to properly extract with the non pressurized basket. But with the pressurized and strong tamping, I cab get it there. I'll eventually get a better grinder, but for now it's good enough.

my Breville 860xl-I’ve descaled it, cleaned it out following the manual guidelines however, still randomly serves up a very foamy bubbly crema. Some extractions are nearly all crema. I’ve experimented with settings and please note it’s random. I’ve changed the roasted bean suppliers, grind settings and coffee proportions. My preference is a dual wall, double shot. The instruction manual says to set the grind to “dual wall” . I have tried dual wall, 8, and 14. Once again note it’s random. Sometimes I’ll get two or three perfect shots and then 3-4 really foamy, bubbly shots. Have you experienced a similar occurrence or can you offer any ideas on ideal settings? Cheers. Note the Foamy crema makes it difficult to add some milk artwork. The taste is ok.

For a diligent person to have random shots, one thing to try / very common is: to TAP a few times pre-TAMP; so make sure the grind settles without air pockets

Nice video. I have Bambino plus and I use pressurized buskets. What could be the reason that after extraction my cofee puck stuck to the busket and ejecting from the basket is not so easy as yours? On the other hand I use 17-18 gram doze but my extraction time is only 23 seconds.

It was practically happening with different espresso grinder settings (4-15). Later, a representative of the manufacturer informed me that my model Bambino plus works better (was desiigned) on pressurized buskets.

useful info above. With your depth of knowledge can you answer these questions, using a machine that can make an expresso coffee from 1. an unpressurized filter what is the nominal pressure generated by the coffee machine in order to produce a good cup of coffee. 2. using a pressurized filter does the machine-generated pressure changes to a greater pressure cos it near to increase the pressure in order to squeeze the coffee out of the lesser no of holes under the bottom of the filter.

I have the same question, because I have an espresso machine that to me seems calibrated for double shot 58mm with 20g of coffee. Everytime I change anything, using less gram of coffee, or using single basket, the pressure will go down to 3-5 bar, every damn time and the water can reach 90-100 gram in 25s. I prefer making single shot and make another fresh one if I still want more for the day, because I hate coffee+milk that's being left too long, even in the fridge. But since the machine can't seem to produce 30ml/g shot using standard single shot basket, I'm thinking about getting a PRESSURIZED one to cheat the pressure.

Would it be possible for you to explain how to unclog the pressurized baskets? i use the exact same machine as you. I recently bought a new kind of coffee and it completely clogged my 2-dose pressurized basket and i can't even try to poke throught the holes with the tool because of the 2 layers in the basket. I have also tried using fire as some have suggested online but that also has not helped. Thank you!

Any ultrasonic cleaner should help with that. I got a cheap one from harbor freight and simple green cleaner. It takes a bit to unclog, but it does help. Trying to poke is asking for trouble. It also gets coffee stains off the basket.

I’m not able to get the needle to the “espresso zone” when I’m using the non pressurized. I’m using Lavazza super crema, grind setting at 6-7, super sour. Fast flow And needle usually don’t move

Hoon's Coffee inside is 6 now changed to 5 and side burr 6-7 now changed to 3. Pressure Needle did moved up a needle but still does not hit the espresso pressure zone. Very quick flow still. I don’t understand why this is happening. Same bean same machine as yours

I have just bought a barista express, and when I do the trick of checking pressure with the pressurized filter basket without any coffee in it, I experience a large amount of water being left in the filter after the pull. My ulka pump is coming today and will get espresso going and fixed the leak.. You use Breville Barista Express which allows for more variables to control output. I have the Breville 810 with elementary control which does not allow for fine tuning as much as your model. Never the less you distinctions of pressurized vs non pressurized are greatly appreciated. Thank you.

Grinder is based on time dosing so if double basket is let's say grind it for 10 secs single only goes to 5 secs. Unfortunately, this is something you have to play with settings.

What i meant is that i dont know how fine or coarse (1-16 setting) to set my grinder when i use the dual wall filter. There grinding option starts from fine=1 up to coarse=16. Having said that there is a grinding option for dual wall as well just before the number 1.

I have had this machine for 7 years. This is the first time i had a decent coffee (cold espresso. Freddo espresso) 8 is about right. The taste is not bitter any more. Thank you again!

With single wall, the basket has to be full to the top for me to get the correct pressure but that is about 22 grams grind for double shot. If I tamp lower than the top, the pressure is too low

Hoon's Coffee pressure is good. The machine builds pressure with both baskets. But the pressure is not ablento escape thrubthe pressurized basket. But I don’t see the “ hole “ in the pressurized basketbto clean it.

But when I use the single filter basket, I dont get the pressure gaurge to move at all, I noticed his does though. I used fresh beans to grind, the instructions said it should use single filter basket, but when there is no pressure I thought I did sth wrong. Thanks for making the video anyway.

Wow I love your videos but I just purchased Breville barista express and I cannot get it to get enough pressure! I don’t know. I have to put the grind setting all the way to zero just to get some pressure.

I am using the same Lavazza super crema coffee but I have to grind it at 3 or 4 to get a good shot. I can't understand why. Other people I know also grind at 9-10 to get good shots, but my coffee comes out watery if I do that.

It is all different settings even with same beans. But once you figure it out you should get a good shot all the time.

Change you're grinder setting at 7 and pull the shot. If runs too fast go down to 5 and see what happens.

For pressurized, grind size is not important as non pressurized so less time to adjusting it. If you the time to mess with it you can get a pretty good result with Barista Express.

Hi Hoon, I have the same machine and i can’t develop pressure with the single wall filters, no matter what I do, beans, grinding settings, tamping pressure. i have even changed the settings in the top grinder from 6 to 4 and no pressure whatsoever. Any recommendation? Best.

Thanks for the video! I have a quick question on an issue that I haven't been able to resolve. After grinding my beans and tamping the coffee into the non-pressurized one cup filter, the grind seems to slide around in the basket, even if it's compressed. This leads to channeling on the edges during extraction (severely under-extracted). This kind of 'slip-n-slide' of the grinds was not happening in the pressurized basket. Only thing I can imagine is that the non-pressurized basket has a much more extreme slope than even the pressurized version which is already steep. Does this only happen to me?! I've tried changing grind size and making sure the tamping is level, but no luck. :/ I'm thinking the solution is to just wait for the non-pressurized 2-cup basket to be available from Breville, but would appreciate any advice if you have it. Thanks!

@@HoonsCoffee Thank you for the quick response. :) Unfortunately not. I have the Bambino, not the Barista Express. The Bambino only comes with the pressurized baskets. I ordered the non-pressurized one cup from Breville's site, because the 2 cup was out of stock, but it looks like it's not even worth it. Will have to wait to order the 2 cup when it comes available. Really disappointed that Breville would sell something like that. It's practically unusable. :/

Hello Frank, I had the same issue and like other baristas have eventually found the combined distributer & tamper to be my go to more and more; the combination distributer & tamper you can find on Amazon, what it has is an edge all around that keeps it a "centered line of draw"...keeping it, the tamper, from getting sideways; it is also adjustable I found out later so it gives you the leeway of depth to play with....try it , it is giving me great single shots. here is the link: www.amazon.com/gp/product/B07ZT42HZF/ref=ppx_yo_dt_b_asin_title_o06_s00?ie=UTF8&psc=1
