I bought a Pecos last weekend and I plan on doing all the mods in your videos, but this one really got me because prime rib is my favorite thing to get at a steak house so seeing how to cook it on my Pecos has me pretty excited, thanks for the video, great job!

Your videos on the Pecos smoker have changed my mind in less than a day. I was about to get the Oklahoma highland smoker but with the tweaks you've done to your smoker it seems like a way better smoker than the OKJoe's

I did the same this Christmas, meat from Wegman’s, kept it in the fridge for 3 days and smoked it to 120, my old thermometer was inaccurate. It went up to 130. I rested it for 30 minutes and surprisingly came out great. Thanks for a very relevant content.👍🏽🙏

I like how it elevates the fire and allows it to breathe better. The downside is you lose some of the small coals.

@@andrewhyde342 definitely remove baffle. His vids on airflow, hotspot etc are spot on. Just wish I had more cooking grate but I can fit a brisket on. That’s why I was wondering about the elevated water pan.

Hey, sorry guys I didn’t get back to you. I think elevating the water pan just allows the hotspot to fall back closer to the firebox. The elevated water pan is, from my memory, is what you might find in a millscale for workhorse offset.

What was your total cook time on this prime rib?

I'm old enough to remember that Prime Rib used to mean a USDA Prime grade of standing rib roast. This was true until just a few years ago when the meat industry changed the definition of "prime" to include every grade of meat when referring to a standing rib roast. I suspect it was a marketing ploy, especially for the restaurant industry.

Rib Roast & Rib Eyes come from a section of the cow called the “primal rib section,” one of the nine primal cuts of beef. 🤷♂️
