I'm not sure how I feel about all that foraging. Where I live, foraging for commercial purposes on public land isn't allowed; it's only allowed for personal use. Especially something like samphire. This isn't some obscure weed that nobody knows is edible/how to prepare. This is a well-known and expensive (if you buy it) ingredient. If restaurants can forage it on public land for free and then sell it (to very wealthy people), it'll probably affect availability for locals.

im concerned about any pollutants/pesticides on the foraged plants. unless they own the land they don't really know whats been sprayed/dumped there. also eating plants directly after picking them can be dangerous because if an animal peed on them it could contain parasites/other nasty stuff. cool idea but idk!!! kinda risky to me

@@Mutiny960Of course they care, especially in a restaurant that serves fruits, vegetables, and other ingredients fresh and with minimal changes. Try eating a good tomato in peak season versus one that's out of season and shipped from across the globe, the difference is huge.
