For someone who lived in Belgium for 10 years I've always thought that Belgian Food was underrated. Always preferred Quick to MacDonalds and Wendy's growing up, but would choose my local fritterie over both of them hands down. From all of the famous Belgian dishes such as moules frites, gaufres, carbonade flamande, stoemp, it's a very hearty and filling cuisine. Some of my best memories growing up there in the 80's and 90's is my parents going to the Midi Market Abbetoire wholesale butchers, summer bbq's were the best. That's the thing the quality of produce whether it be meat, dairy or seafood is top notch. Apart from that all of the different migrant communities added another dimension to the mix. Forget about anything else after midnight but a pita gyros and frites after a night on the town in Bruxelles. Another favourite memory is going to Osteend for a seafood meal or anyone of the great restaurants around the Grand Place (yeah they might be a tourist trap but still had some great meals and memories there) Don't get me started on the Belgian Beer, Godverdomme jongens, smakkelijk ja? Last time I visited was in 2006, looks like another visit is long overdue and a visit to Carcasse by Dierendonck is at the top of the bucket list. Just wow, looks like meat cookery at its absolute best. And the passion of the chef. To think he's only a few years older than I am and he's already elite in his field is crazy to me lol. Ik zie het al voor mij... Een compagnie van 8 man die dit geweldige restaurant bezoekt... En eentje is vegetarisch en allergisch aan alles en nog wat. :). Carcasse staat al jaren op mijn bucketlist. Completely Awesome! Next time I go to Belgium, I make it a point to eat at this place. Chef made a fantastic meal. The ambiance looks great, and the meat selection and aging is on point. Although meat cutting varies in Europe compared to the states, this looks yummy. Innovative for a steak house!!!

Wow, Wow and wow again. What a feast. My favourite is the Tomahawk, I like it put straight into a deep bubbling cauldron of beef fat, it cookes medium rare within about five minutes, it was out of this world. I wish that there was a Restaurant like this in the NW of England!!

As a former Executive Chef of a fine dining Steakhouse in Norcal, my guests are always suprised to see me never put a steak or burger on a grill, but instead a searing hot flat-top. Yes, sometimes I do put it in a smoker to get developed more flavoring, but there's nothing like searing a steak or burger in it's own fat. My friends always asked why my steaks and burgers have so much flavor, cooking on a grill, all that flavoring just dripping down , wasting it, and yes, you can cook it it's own fat, searing in the crust, and finishing it off on a grill too.

If you ask me about een goei stukske vlees I would say it’s okay. But if you ask me on a deeper level I would say that it’s more than een goei stukske vlees. Het gaat om traditie, de perfecte balans tussen vuur en vlees, de kunst van geduld terwijl je wacht op die ideale korst. Vlees vertegenwoordigt iets oers, een verbinding met onze voorouders, met de aarde zelf. Het draait om samenkomen aan tafel, verhalen delen over een bord dat zijn eigen verhaal vertelt. Het is een viering van smaak, een reis van boerderij naar bord, en een eerbetoon aan de ambacht van grillen. Vlees verbindt ons met onze roots, met de tradities die generaties lang zijn doorgegeven. I love steak.
