They cut a perfect square on the saw, then he goes in on it with the hand planer? Why?

My guess is they only sawed to a fraction of the final dimensions on purpose. There isn’t any video of them measuring it when planing so it just must be part of their system. What I don’t get it why they are using a planer instead of just a sander - a planer can be more marring than a table saw. Whatever it is, the final product looked amazing
