Hi Jeff, hope you both and your garden are ok after Cyclone Debbie passed through. Lot of flooding down our way, Logan, Yatala, Gold Coast and Tweed. We were fortunate mostly heavy rain, about 400mm in two days. Been cleaning up for the last two days, lost power overnight but we were very lucky. Hope you have been just as fortunate. Jen

I raise my own ginger here in the southern USA & I like watching your videos:) I am 71 and raise most of my stuff in containers so I can keep my huge oak trees. BK I was watching another one of jeff's vids and someone asked him a similar comment, this is his reply, hope it helps! I peel the ginger & keep the peel to use in lemongrass tea. Then slice the ginger about 1-3 mm thick. For 500 grams of ginger, I cook it in 5 cups of water & boil it for 15 minutes. Then I take it off the heat & add 3-5 cups of sugar, then blend it with a stick blender. I put it back on the stove & bring it to the boil, then reduce to a simmer for 30 minutes. All I do then is strain it. The liquid is ginger syrup & the rest is what I call "finely grated crystallized ginger"

Absolute genius! I am attempting to grow passion fruit at the moment, currently waiting on germination. I don't know that I will ever get those results in the UK, but I'll give it a go. My son eats the fruit as they are, but I was looking for other ideas, not just my default of topping for panna cotta, compote or the like. I love ginger, so the drink idea appealed to me. This video is great, giving people ideas of what to do with the bountiful harvest situation. Out of interest, how long do the fruit store at room temp?
