Hi, me Indonesian too, we can easily get xanthan gum from shopee right? It's cheap too. But on the other hand, millet flour is a little bit pricey haha. Have you tried Anna's recipe? I would like to know how it came out!!

I just made this last night. I subbed millet flour for 1 cup white rice flour ½ cup amaranth flour, and used canola instead of olive oil. Delicious! I would use more amaranth flour next time and bake in bread maker. 🥰

As someone with Celiac Desease, I am very excited to try this recipe . It is difficult to find gluten free bread that tastes good and does not fall apart. Your gluten free pie dough is my go to recipe as it doesn't self-destruct when transfering it to the pan and tastes great. I hope that one day you will consider creating a gluten free cookbook containing all of your current recipes and some new ones too. All of us frustrated gluten free bakers would be gratefull.

🤷🏼♀️ I’m a bit confused. I’ve heard and read several times that tapioca flour is exactly the same as tapioca starch. I did a slight variation of this recipe (my first gluten free loaf for my daughter who recently was diagnosed with ulcerative colitis- she experimenting with cutting out certain foods) … She was really happy ! 😊 Thank you for taking the time to share these tips and tricks that are so helpful. 💚

Great to see the collaboration with Malaysian Chef! I’m from KL too. I’m learning baking gluten free cake and bread recently. With Ili in this video, I’ve learnt to get the local ingredients instead of the import ingredients which cost a lot. I think I’ve succeed in my first baking on my own version of Banana black sesame bread last week. My texture and the bread looks just alike Ili version, i think that’s Malaysian favourite style / texture. I will definitely try out this recipe. Xantam Gum (teaspoon) can be used in GF breads to hold the flours togther. Starches also help to hold them together, potato, tapioca, corn starch.

Hello, two great chefs, atta flour is not millet and is never gluten free. Atta flour is made from whole wheat. Millet is not hard to find in Malaysia, most organic shops have them. It is very misleading to say that atta flour is millet and it should be corrected. Thank you Anna for this great recipe and will definitely try this healthier version of bread

Absolutely correct. How can these "professionals" get their facts wrong. Atta flour is not millet flour, so Ely is definitely not baking gluten-free bread.

Yes atta is not millet and it is not gluten free. i think part of the problem stems from the fact that sometimes indians use the word "atta" in place of the word "flour", example Manna Multi Millet Atta (this IS gluten free though)

I really enjoy watching your channel, definitely enjoy all your recipes. But this episode really brought it home due to my daughter also has PCOS and wasn’t aware that the foods affect her symptoms. She is also gluten free intolerant and had to change her diet which I thought it will be difficult, but your channel made it better to understand how to prepare more healthy gf recipes. I would love to see more gf sauces. Thanks again for all the helpful information.

I just came across your recipe and tried it today, as I really can't eat the whole wheat sour dough bread I make for my husband. It didn't go as well as I'd hoped. It's too salty for me, but I can fix that by using less salt. The bad part was it looks like an angel food cake that wasn't hung upside down as it cooled. It sank down, for some reason?? I didn't have the right size pan, (my bread pans are 8 and a half by 4 and a half), not 5 by 9. I did bake it longer to compensate, (another 8 minutes) until the temp inside was 200 degrees. Would adding more xanthan gum help? Also the only tapioca I could find was Bob's Red Mill and it says on the package "flour" and underneath "also known as tapioca starch." Is this really the same thing or should I try to find something that says tapioca starch? I'm just trying to do some trouble shooting before I try this again. Thanks for the help.

I made it the same way and I expected it to rise with out being covered. I checked yeast too. At 45 minutes it did not rise like shown in video. Disappointed, what could I have done wrong. I made two batches and similar results. I am going to increase rise time and cover next time. Maybe that’s why?

You need it as a binder or else the bread will crumble. Maybe try guar gum?

@@kentangtomat You’re welcome! Yes, this kind of bread is actually drier than others I’ve made so, you definitely need a binder. I’ve noticed that amaranth flour helps it bind together better also. 😉 You’ll have to experiment a little.

I think the bread is too heavy for French toast. It tastes good overall, but I think it’d taste funny as a battered bread and I don’t think it will handle all the dipping and coating well. 😢

Sorghum will be a good substitute, Amaranth, Teff if you can get it. Even Almond, Arrowroot , Buckwheat are all gluten free options to use.
