As a baker I can tell you that the only thing that’s difficult in making eclairs is that because you cook the dough it loses moisture the more moisture it loses the more eggs you might need to add, so the goal is to reach this consistency don’t be afraid if you need to put a bit more or a bit less eggs. The other thing is if you under bake it it’ll collapse but it will still taste good and after you’ll fill it with custard no one would know! The most important thing about baking is to not be afraid of it and not be discouraged. Good luck to everyone 😊

I remember when I first started baking, I had the best, most well explained recipe for Macarons you can imagine, complete with warnings about possible mistakes, so my first ever Macarons turned out awesome! But a week later I tried my hand at Fudge Brownies that turned out horrible, because the recipe was poorly explained and even left out some steps. Anyone can be a good baker with a good recipe.

Generally you cook eclairs in a hot oven so they puff up big. (I am a fuming pastry chef) Edit: i usually do 425F for 5 mins and then bring the heat down to 350. That’s hot enough to singe the parchment

I just followed the recipe for a chocolate frosting yesterday since I’d run out of store bought, and figured “We’ll just make some from scratch instead!” It was really easy, and maybe it just wasn’t the right recipe for my liking, but it felt like I’d done something wrong texture wise. Same with baking things from scratch as well, I always have some anxiety 😂

Baking is tough when it comes to decorating and consistency. In cooking, making a dish is harder than making a batch of cookies, but making dozens of cookies that all look relatively the same and taste the same in a short time frame is excruciatingly stressful. And then cakes are even worse, especially worse if you’re a cake artist. You have to decorate a massive cake and make sure it doesn’t fall over in like a day or 2, and make it look and taste good.

Decent enough that i started doing pizza instead. Found it more intriguing. But anyway, you only need to not doze of for a bit and follow the steps. What's hard is to invent something new.

As a baker and food service worker for 15 years or so. If you can measure, following instructions, and have a sense of timing and time management, yea i think anyone can bake/cook. Its being up at 3am and making 25, 40, or 300 of something identical and consistent in a measured time frame. Had to make brioche every day for 3.5 years, done well but the arthritis and carpol tunnel that followed is a whole other matter. I love the work and somethings you learn as you go, but i dont think gate keeping is necessary. You'll only get better the more you do it and i hope joy is found in the process

To add: Its also the little bit of joy you give to someone else when you share it. My coworker(server) asked if i wanted to deliver a dessert platter i made to a table and i almost cried because everyone was excited to see the design. As back of house, we dont get to see it often. It was kinda special for me too

Been in the food service industry just as long as you and also deal with the recent carpel tunnel issues in the recent 2 years. burn out from working during covid forced me to switch career paths. though now, I casually bake on the side for extra molla while doing more of a office work setting. Baking is definitely something anyone CAN do, definitely!

If you want to be true to the eclair, make a chocolate glaze for the top and the fulling should match the glaze so chocolate pastry cream for a chocolate glaze, vanilla for vanilla, etc. The history behind it is interesting AF and I enjoyed learning about pate a choux. Good attempt!

As a Chef, you did a great job although you failed. I'm still giving you credit for giving a good try. 1. The wax paper is proof you ran the oven closed, and didn't rotate the pastry. 2. Although a bit crunchy, the pastry should be soft and evenly cooked. Which if you look at the bottom of the eclair you can see the singed sides. 3. Baking, is science, everyone will tell you. But keep up the great work and I hope you improve greatly. Yes, this is constructive criticism. The Culinary world is extremely brutal. So when i say these things. They aren't meant to hurt, yet areas for improvement to help you improve those areas. 🎉 So party on, and Let's go!!

Currently studying baking and pastry arts, and I can say one thing, the difference between professional and home baking is there, as most high end professional places expect 100% consistency down to the gram of weight, color, taste etc., whereas home baking that pressure isn't there. The choux looks very good, though a tip for next time is to forgo the piping tip and either use a rounded tip or none at all, as those ridges are prone to burning, and are redundant to an extent if coating with chocolate. As for burning, could either be an oven issue or a temperature control issue

Baker here, I don’t think a baker would say baking itself is hard but the 2am starts, 12 hour shifts and working with 10-15kg’s of dough at a time is definitely not easy. Not to mention having to be consistent with your products. I do enjoy the money though, baked goods are so easy to sell and really presentable goods sell fast even with a very high markup

I have a pastry arts degree and these look wonderful. As far as the burnt parchment that can happen sometimes if it isn’t held down flat. U usually use a tiny bit of the batter for glue on the corners. However I like the silicon mats much better. They’re pretty cheap you should get one.

Baking itself isn't difficult once you have a recipe and just have to do it again and again. The aspect of baking that is difficult compared to cooking is creating something new/better. Baking is very exact. Even if stray from a recipe, a lot of things can go wrong, so creating a new recipe can take a lot of trial and error (and making sure you know exactly what went into each batch).

This. I consider myself a beginner baker, but I’ve been able to “nail” soufflés and macarons first try, provided I have a recipe. *Recipe testing* on the other hand… can go from edible, to decent, to “I’m being astral projected out of this plane”. And it all depends on if the stars align that day. Jk it depends on your understanding of the ingredients and what they do. That’s the hard part.

Make it a priority to taste one when you visit France at some point. Every bakery sells them, they're quite affordable, and they are wonderful. Abroad they tend to replace the custard or have one without any depth of flavour. If you make them get the best butter you can. Please.
