How refreshing to hear Ms. Peach speak in Japanese. ☺ Thai green curry is one of the best curry I've ever had. It's creamy sweetness is mixed with bold umami flavors. I think, one way to adjust its spiciness is to avoid cutting the chili open. Chili itself is spicy, and if its cut open, the seeds come out. Like you said in the video, since spiciness is concentrated in the seeds, the dish's spiciness is increased especially when the seeds popped or crushed in the sauce, so I think chili is adjusted based on the desired spiciness level. One of Thai green curry's signature selling point is its spiciness though, on top of the said smooth umami coconut creaminess. Sad that I can't imagine the same, similar or better taste in Jamie's version. If you guys really end up trying to make Jamie's version, try to make the actual authentic kind side by side too, just to salvage your taste buds just in case. 😅 I like your guys' channel. You guys are great. Very heartwarming to watch. Keep up the good work, Mr. Steven and Ms. Peach. 😊

About the Watermelon seeds, yes it's the same everywhere. When I was a child in Scotland my mum would tell me that if I ate orange seeds then an orange tree would grow in my stomach.

In Thailand, My mom use almost a 100 of chillies to make a green curry paste for 4 people and put more sliced red chili at the top and put a sliced guinea pepper chilli for an extra in my dish. The only vegetable we can put it to green curry is eggplant (purple, green or white that's OK becuase it will turn to green color when it's done anyway). Mushroom is second choice If you don't have an eggplant.

The seeds aren’t the spicy bit of the pepper. All the spice in the pepper is in the membrane between the seeds that holds them all together throughout the pepper so the animal that takes the pepper will eat the outside of it and the spice discourages them from getting to the seeds so they’ll likely drop them and they’d have a chance to spread and grow.

Hey, you two! I just want to say that you guys make a very likeable duo and I love your Uncle Roger reactions. As someone who finds Japanese Culture fascinating, you two also give a unique perspective in that regard. I don't know how far you plan on branching out your reactions, but there are some fun ones I think could be interesting and might help your channel to grow. For one, there is Cilvanis, who has a short skit series called "People who think they speak Japanese because they watch anime", which I find really funny. RDCWorld1 also make amazingly funny skits, ranging from short random things like Anime tropes to poking fun about NBA stars, but they also make fun series like " Anime House" or "When People Take Anime Too Far". If you plan to just react to Uncle Roger, for now, I'm perfectly happy with that as well. You guys are subbed anyway and keep up your great work! It'll be fun to see your channel grow!

I'm commenting very late on this video, but hopefully you will still see it 😊 The best way of reducing the spiciness without changing the flavour too much would be to experiment with the chilli variety, I think. That way you can still get all the other fundamental chilli flavours while getting less heat. (A lot of online Thai green curry recipes mix and match chilli types, it seems. For example, American recipes often replace Thai green chilli with serrano chilli, a Mexican variety; I guess serranos are easier to find in the USA.) When cooking a green curry recipe, you should probably still get good results if you use 50% Thai green chilli and 50% a milder green variety. I don't know much about what chilli types you can get in Japan, but when Peach mentioned shishito in this video, I looked up its characteristics on Google and it should probably be a good alternative. Also, unlike Jamie Olive Oil, make sure you use full-fat coconut milk! Capsaicin (the heat-producing chemical in chilli) is fat-soluble, so full-fat coconut milk should reduce the concentration of capsaicin accessible to the mouth membranes at any one time. This is the same reason why milk is better than water at soothing chilli burn: capsaicin will dissolve in the milk fats, whereas all water does is spread the capsaicin around in your mouth and make it burn more evenly - not fun at all. I've found your channel only recently, but I love all your videos so far, and always am eager to see the next one! You two have such good fun together, and it's so wonderful to laugh with you 😊

Despite same family, taste and medical usage of galangal and ginger are totally different. Imagine, if you use ginger for Tom Kha Kai instead, it will be a disaster. (Kha = galangal in Thai) In Southeast Asia, we use a lot of plants in the ginger family for cuisine. For example, there is also the Chinese ginger that cannot be replaced the common or greater galangal nor the common ginger. We add also sometimes the Chinese ginger in the green curry with seafood but separately, not in the curry paste.

The tea probably came from the chilli jam drawer. I use silicon spatula and also molds for cakes, loafs, etc. Any of the silicon stuff will be fine up to about 350-400F.

Now I understand why my ancestors in Malaysia give all of our nature mineral , gold and silver to the British empire when we were colonists ... When the first colonial came they ask for our spice and cooking techniques , then our ancestors go like "take our mineral , gold and silver as much as you want but stay away from our tradition and culture , the last thing I want is my descendants tradition got fucked up by your 'creative food cuisine' " .

I think galanggal is just rare outside SE Asia. The reason why it's used a lot compared to ginger is because it has a stronger flavour.

スパイシーな食べ物をあまり食べない場合は、グリーンカレーの緑色のためにタイのライムの皮を増やし、青唐辛子を少なくしてください...しかし、2つの唐辛子ではありません... If you don't take much spicy food just put more thai lime skin in for the green color of the green curry and fewer green chilies...But not 2 chilies...

I dont think there is anything wrong with experimenting with food, if it is improving the taste. However you can also ruin food by going overboard. That is exactly what Jamie Oliver has done while cooking asian food, most of the time.

I'm Mexican American (meaning my parents are Mexican but I was born in the USA). I dated a Thai man. My culture, like his, loves spicy food. I would highly suggest to never add milk to spicy food... Our Mexican moms tell us that you'll have diarrhea, so avoid all dairy products. If you want to use milk to help you get over the spiciness of a certain food, just swish milk in your mouth but DONT drink it. Also, please don't add sugar to spicy. You'll be like Jaime Oliver and his chili jam🤢🤢

I don't even get upset by Jamie getting all these recipes wrong and I think it is fine if chefs put their own spin on dishes, but the reason I really dislike Jamie Oliver is that he doesn't mention that he's deviating a lot from traditional recipes. I mean, Gordon Ramsey's carbonara video has as much to do with traditional carbonara as Jamie's videos with Thai green curry, Ramen or egg fried rice, but at least Gordon mentioned that Italians use guanciale instead of bacon and that all the ingredients he added are also not traditional. Ideally he wouldn't even call his dish Carbonara, but I get that on KZbin, you have to do some clickbait, so you use the name of a dish that people actually know to get the views. If you only watch Jamie's videos and you don't know better, you might actually think he's showing you authentic recipes and that's why I can't stand him.
