Having Kratos being the violent revenge-seeker god that he was for two more games would be far too boring. He has a son now, i think the writers of the story did a good job in his character development throughout the games. It all depends on your definition of God of War, which you failed to express

The giants have: Their own realms where they can, presumably, not worry about the destruction they cause. Magic. Some have the ability to shapeshift and grow smaller while other (like Fay and Atreus) are naturally small.
