Behaviors (which include thinking patterns, responses to stimuli, etc.) can change and evolve over time. And with this, the brain physically changes. It can also positively or negatively impact many aspects of our life, depending on which behaviors we change. However, the way they're defining "personality" is different from the covert behaviors (thoughts/feelings) and overt behaviors (outward actions) that you're probably referring to. They're saying that personality is more related to aspects of our life that make each human unique--it's those inclinations that we seem naturally drawn to. We can teach ourselves to develop new skills and behaviors (or to under-develop skills and behaviors) that affect the way we interact with people, do our job, and ultimately approach life... but we have personality traits that we are naturally inclined to possess... if that makes sense.
