Wait; am I nuts or can gluon evolve too? Because I remember watching another playthrough, and this form looks different from that one....

Gluon has two phases, and a different physical form for each. First you have the red mecha that you fought earlier in Area 0, and then the glowing ball of light. I am not aware of other forms, though if you've seen Psyvariar 1/Delta footage, then the Gluon from that game would look different indeed.

why you on playing on the heavy delayed pcsx2 emulator instead of a Naomi one?

The PS2 emu is not as responsive indeed, but the PS2 port in general is the better one : extensive practice options with stage/boss select, boss HP display, and an autoroll button that bypasses the need to wiggle and wall hug and makes the game a lot more fun to play The NAOMI/DC versions have none of those features AFAIK
