Have you ever contacted WG Provisions in Ames Iowa to buy your smaller Fall Back pigs? They butcher small pigs for whole hog BBQ in Sydney Iowa. They offer various size pigs so the consumer can decide what will work for their needs. We were able to tour their pre-cook beef brisket plant in Jewel Iowa and sample some brisket which was fantastic. These might be additional products you could offer your customers.
