Pumpkin Bread
This is such a simple recipe and comes together in no time at all. I used a hand mixer, but this can easily be made by hand using a whisk and a spatula. This bread is a must try especially for fall!
Makes 1 loaf (baked in a 9 by 5 by 3-inch loaf pan)
Ingredients
2 large eggs
1 cup brown sugar
1 cup pumpkin puree (I used canned pumpkin)
½ cup vegetable oil
1 tsp vanilla
1 tsp cinnamon
¼ tsp cardamom (optional)
½ tsp salt
1 tsp baking powder
½ tsp baking soda
1 ½ cups flour
Chopped pecans for sprinkling - about ¼ cup
Directions
1. Preheat oven to 350 degrees Fahrenheit and grease a 9 by 5 by 3-inch loaf pan loaf pan and line the bottom with parchment paper. You can also just grease and flour the pan.
2. In a bowl whisk the brown sugar and eggs until pale and foamy, about 1 minute.
Add the pumpkin, oil, vanilla, cinnamon and cardamom until smooth and emulsified.
3. Add the salt, baking powder, baking soda and flour and combine using a spatula. Be careful not to overmix.
4. Pour the batter into the prepared pan and sprinkle with the pecans.
5. Bake for 50-60 minutes until a cake tester inserted into the centre comes out clean.
6. Let cool in the pan for about 10 minutes before removing. Enjoy warm.
