I decided to redo the pumpkin puree video since I didn't catch part of the process on camera in the first video. This pumpkin puree is suitable for use in pumpkin pie, pumpkin bread, pumpkin cookies, soups, and other dishes where you would use pumpkin. It is easier and you waste less of the flesh if you remove the rind after you cook the pumpkin.
Ingredients:
1 whole pumpkin
Directions:
Wash the pumpkin to remove any dirt. Cut the pumpkin in half. Remove stem and seeds. You can save the seeds to roast for a snack. Slice the pumpkin into 1 inch wide strips. Cut strips into 1 inch chunks. Place pumpkin in a pot and cover with water. Bring to a boil and then cook until tender. Once tender, drain pumpkin in a colander. One pumpkin is cool enough to handle, use a knife to gently peel the rind off. Place pumpkin meat in a food processer or blender. Blend until smooth. Spoon into quart bags and freeze for future use.
