After starting on the 750cc and moving to the 1000cc do you think you woulda had no problem with starting on a 1000 instead?

Absolutely, especially with newer 1000cc bikes. You can easily adjust the power down to a lower power mode on the bike until you get used to full power. I rode the 750 for about 5 months before getting the 1000cc.
