Ingredients:
2 cups Rice Flour
3/4 cup White Sugar (add 2 Tablespoons if it’s a bit bland according to your taste)
1 Teaspoon Baking Powder
1 Teaspoon Dry Active Yeast
1 1/2 cups Water
Tangzhong Paste
How to Make Tangzhong Paste:
1/4 cup Rice Flour
1 cup Water
*** Just a quick note, Let it cool first before removing them from the moulders. It’s easier to remove the puto.

I am from Benin (West Africa). This is also one of our side dishes back home. We call that Ablo. We pair that grilled chicken/fish, veggies’ salad(tomato, cucumber, onion),and tomato sauce. I tried your recipe and it turned out perfect!

Hi Joan - could we use 1 1/2 cup of coconut milk instead of water I think it would be more flavorful . Please advise thanks.

Hello Raquel, I have not used Coconut Milk as a substitute because Puto Calasiao is meant to have a tangy (maasim asim) pero a little sweet flavour. They don’t use Coconut Milk in it kasi madaling mapanis kapag meron coconut milk. But it’s up to you, you can experiment as well. Let me know what the taste like and kung aalsa sya kapag coconut milk ang gamit. I know yung binibili kong Puto dito sa Vietnamese shop here in Melbourne, lasang lasang ko yung Coconut Milk. And it’s fluffy too. Maybe to start with, use 1 cup of water and 1/2 cup Coconut Milk, para hindi overpowering yung lasa ng gata sa puto mo 🥰

Did you follow the instructions and right measurement of ingredients? Hindi pa ba expired yung yeast mo? Or maybe masyadong mainit yung tanzhong paste mo nung hinalo mo sa batter kaya namatay yung yeast at hindi umusbong? Mga friends ko nag try gumawa and successful yung Puto Calasiao nila.

Calasiao puto. The mixture is placed in stone containers fermented overnight. The stone containers develop bacteria which gives rise to the puto without using yeast.

Thank you for watching po 🥰 Yes, ako rin po ay lagi ng bumibili ng rice flour kasi po lagi lagi na rin ako gumagawa ng Puto Calasiao. So much easier than the traditional way, and yet pareho ang lasa at texture. Malapit lang po kami sa Calasiao Pangasinan kaya eto po talaga ang paborito kong meryenda or almusal noon sa Pilipinas

We don’t put coconut milk sa Puto Calasiao… Pwede niyo po itry, hindi ko lang po alam kalalabasan ng lasa niya at texture. So parang magiging Vietnamese Puto sya, kasi nilalagay nila is Gata.

Kahit anong brand sis, basta Rice Flour. Usually nabibili sya sa mga Asian stores (if you live overseas). Pag sa Pinas naman, usually marami ng nagtitinda sa palengke ng Rice Flour

I followed directions, umalsa sya while cooking pero bumagsak after I removed from the steamer. Does the boiling water matter? Mine was above the line compared to yours and high heat. What’s the proper temperature for boiling water? Medium? Low? Thanks

Kapag naga steam ka ng puto bigas, must only be low to medium heat. Kasi pag bibiglain mo, biglang alsa nya agad. Ang tendency is deflated sya pagkatapos mo alisin sa steamer.

Thank you sis. It’s a must-try recipe. Ilang beses na rin ako nag experiment ng different procedures and ingredients, but this by far is the perfect one! Same texture and taste ng Puto Calasiao. Although mine is a bit matabang ng konti kasi ayaw ni hubby ng matamis.

I have not tried condensed milk. Kasi hindi na sya matatawag na “Puto Calasiao”. We only use the same ingredients na ginagamit sa paggawa ng Puto Calasiao.

Yes, pwede po mag add ng cheese sa ibabaw pero po mga 1 minute bago mo iswitch off yung flame. Ang ginagawa po namin sa Pangasinan is. Nagi-grate na lang po kami ng cheese pag malamig na yung puto. Mas masarap sya.

Hi Sreeprada, thank you for watching 🥰 You can use the normal white granule sugar. The Puto / Rice Cake will last up to 2 days in a room temperature even if you live in a humid country. Usually, in the Philippines, we sprinkle Kraft Cheddar Cheese on top and we can have it for breakfast or snack any time of the day. We usually partner it with a Singapore Noodles or Pansit. But you can it the Puto alone.

Pwde po mg lagay ka ng tubig sa caserola at initin mo konti din ipatong mo yan, yan kc ang ginawa ko pg gagawa ako ng tinapay para di kna gagamit sa oven, share ko lang po idea na binigay din sa akin ng kakilala ko.

Yes, that’s a great idea! Esp sa mga walang oven. Good kitchen hack! Kaya lang there’s a certain temperature limit din sa yeast, kapag masyadong mainit yung tubig at hindi natancha, your yeast will die, baka maging deflated lang ang puto or hindi mag ferment. Pero kung kaya mong tanchahin ang init ng tubig sa kaserola, you can absolutely do it. Thank you sis!

Hi, maybe dont’t open it while steaming, kasi nag iiba ang steaming temperature niya kapag binubuksan. You only lift the cover when done cooking/ steaming.

After cooking your tanzhong, pour it straight away and mix thoroughly so that your batter will be smooth. My apology for my video, I was in a rush making the video that’s why my batter wasn’t that smooth. I made another batch after this and it was smooth 😊

Pag gata ang ilalagay niyo is hindi na sya matatawag na “Puto Calasiao”… It’s meant to just have water in it. Para pag nag ferment sya is medyo matamis na maasim masim ang lasa ng Puto Calasiao

I put 3/4 cup sugar to start with. It means, if the taste is bland for you, you can add 2 Tablespoons of sugar next time you make another batch.

Your might end up with dense puto because your rice flour is more than 2 cups.
