One of our viewers askes a question and I do my best to answer it. How when to add in flaked corn when mashing in cornmeal and flaked corn together to make moonshine. I also answer this question as if I were using Broken Bones Distillery High Temp Enzymes.
The easy way to learn home distilling.

Angle Yeast - Yellow Label - It's a dream come true for mashing grains. Get barrel, fill with hot water, dump grains in & stir, dump in Angle Yeast Yellow Label. Done. It will convert ungelatinized starches into sugars and then ferment the sugars. At Room temp but I keep my ferments at 80F. Works great with any crushed Corn, Wheat, Rye, Oats, and Rice. Huge time & money saver.

I still haven't tried the angel yeast, but it is definitely on my list.

@Uncle Charlie🔧 Does it change the flavor any? I saw a video on another channel where the guy tried it and said it definitely had a different flavor. Wasn't sure if it was good, bad or just different.

Yellow label works great with rice flour but I’ve had limited success using it with corn meal. With corn is seems like I’m not getting complete conversion. The ABS of the fermented wash is lower the that of a wash made with hi temperature amylase and the same weight of corn. Maybe I’m doing something wrong.

@Uncle Charlie🔧 I hope that works out! I'm interested so please let me know if your experiment is a success.

So glad this popped up. I just ground some corn and will be mashing in this Friday. I will be adding in some malted wheat and barley though. I know I could do this without the Broken Bones enzymes but I want to make sure it breaks down all the starches so my plan is to do just what you said only after the mash cools to 160 add in my malted grains and let cool the rest of the way down naturally. Is this plan okay? The one thing I am getting mixed thoughts on is the first part. (even if not doing malted grains) I have had people tell me that you have to let the ground corn gelatinize before adding the High temp. If so how long does that take or is there some reason why this part can be skipped in this particular process. Thank you for your informative videos.

A company sent me 10lbs of flaked rye instead of flaked corn they said keep it , they sent me the corn right away, but how do i use this rye , i heard its very difficult to use when your mixing with flaked corn, maybe you can shed some light on this.

You can add rice hulls with the flaked rye to help with drainage problems associated with it.
