Just fought three sour mashes that refused to start, all three recipes were identical, PH 5.0. It was my temp, even though I have made several mashes in the same temp range.These didn't like the mid 70's. Small space heater took care if it

He literally said 3 pounds of bananas per gallon of water. And 6 pounds of sugar for the entire mash. There are no other ingredients… Except yeast. You should probably listen when people talk. They mean what they say.👍🥃

I actually have a follow up question: When is it safe and what will happen if I open my thumper after I cut the heat? As I understand it, close the heat, watch the drips stop (a few mins maybe). This would mean equal pressure so it's safe to open the thumper (with gloves ofc). I don't have a valve and can only do it this way. Bit of vapor should come out but that's it.

@@ToastedSynapseGaming vent the boiler first and that in turn vents the thumper. As you said wear some gloves and stay clear of the little bit of steam that will escape. Now be advised, I'm not saying that you need to vent the boiler while you still have a hard boil going on. Let the still settle down for a minute and allow the pressure to subside. When you hear the copper start to "oil can", its already creating a vacuum.

If I am not using wild yeast, how much distillers yeast should I use. also, what gravity should I be seeing when mash is fully fermented and ready to run

People over here still make brandy with JUST fruit in a barrel with a bit of water. They don't really even mash them up or strain them as stills were design to run with fruit in them and have a stirrer inside the boiler that you can turn while the run is going (with fire wood). The wild yeast is provided by fruit that fell on the ground which are also collected. And some add sugar, but others don't want to spend a dime and use just fruit. This simply came as a solution for what to do with fruit from your own fruit trees that is going bad. Because you can't make all of it into jam or preserve it and it's a shame to waste it, therefore, "would you look at that, it's freely fermenting me alcohol" is probably what the first person thought. Suffice to say, not all of them are good due to the lack of interest from the farmer, but with today's knowledge, all of them could be good with proper care and attention.

@@StillnTheClear I've seen the equivalent of that. It's 96% Calcium Carbonate and 4% vitamins used for the same purpose (add a bit to regular feed to strengthen bones). I guess it's sort of the same, chemically speaking. I'm only worried about the fact that at the start of fermentation, the PH is fine and maybe (I don't know) Calcium Carbonate will raise it without me wanting that. Maybe waiting a few days as the PH lowers and adding it after would work better. And heck, it also has vitamins, those are good for the yeast. Thank you for the reply and the link.

@@nonowaseem2727 I would not try to make a fine powder with this mill. I don't think it has precise enough adjustments to do that job with out grinding the metal plates together.

Got one for you, making a grain vodka for clean spirit for mixing and macerating, how many distillations would still all flavour away? So far I’ve done three, would any more be a waste?

It isn't so much how many distillations as it is the proof coming off the still. The higher the proof the more pure and less flavorful. 192 proof is about the highest proof that can be strained for a home distiller. It requires much reflux to attain. If you have a column still with a deflagmater you can achieve it.

Why screw around drinking any alcohol. There is no proven safe amount of it. Yeah, you’re not going to get sick eating bread. But to intentionally consume alcohol with the intention of getting a perceptible neurological effect (relaxed, buzzed, drunk, or plastered) isn’t smart. Ethanol, though not as poisonous as methanol, is a poison. No point dabbling with alcohol.
