It should be ok but the taste might be different, salted egg yolk is the soul of this bun. A salted egg is an Asian preserved food product made by soaking duck eggs in brine, or packing each egg in damp, salted charcoal. From the salt curing process, the salted duck eggs have a briny aroma, a gelatin-like egg white and a firm-textured, round yolk that is bright orange-red in color.

I love this! For the lava to flow, do I have to serve immediately after it is steamed?

Best serve it hot/warm, you can keep it in freezer after cooked, but the molten effect will be slightly reduced compare to the first steaming.
