Qualitative Analysis of Oils and Fats :-
Fats and oils are a heterogeneous group of predominantly hydrophobic compounds. . They make up part of all cells and help to maintain the body temperature. They form fatty tissue around delicate organs to protect them from injury. Chemically fats and oils are trimesters of glycerol and higher fatty acids. The distinction between fats and oils does not have a chemical basis. Those fats/oils that remain liquid at normal (ambient) temperature are generally taken as oil and those that remain solid, fats.
