I wish I knew the recipes because when you talk (this video wasn't that bad) you talk so fast that I can't understand what you're saying so I can't get the recipe down. Would you be willing & able to write down your recipe's and put them online or somewhere on utube? Just a suggestion from someone who has somewhat of a hard time hearing. Like mandarin or 4schuan you mean? Vn people culture wise are more closer to Cantonese even theirs upper generation in some way just like northern china people take on lots of Russian culture alike....

@@Omega65713 Yea, basically Mandarin-speaking region of China or could be anywhere in China really it doesn't have to be Mandarin-speaking regions necessary. Sichuan, Hunan, Hakka, western Hui food...etc. Are all excellent examples of all other Chinese food he can do a review on.

Not sure if you can get this in Edmonton, but here in Singapore, we use this cut of pork called "不见天" or "Bu Jian Tian" or "Never meets the sky", which is the pig's armpit between the shoulder and belly.

@quang Tran: try Save On. Last December I bought pork belly there with the skin on and there's a good amount of meat. The problem is lately they haven't had any. I'm guessing they sell it occasionally during the holiday season. They have two types pork belly with skin on or skinless. It's packed in a tight vacuum sealed wrap. You know already that the meat very good quality.

Yeah in general it's pretty hard to find pork belly that's not too fatty unless you go to like a Chinese market. They'll probably be able to cut it for you if you let them know you're making siu yuk (Chinese roast pork)
