@@AidenLS Other cultures? where Asians and Jamaican culture and food is concerned I am not quite sure what that means. Jamaica is a Creole culture, it a mix of African, European, and Asian cultures. That makes out of many people one. ( our national motto) 60% of black Jamaicans carry at least 1% Asian DNA, mostly Chinese and Desi. 11,701 people of recognizable Chinese descent live in Jamaica. and they have been there for more than 200 years. The British imported thousands of Chinese men to replace the emancipated enslaved Africans who mostly refused to work on the British plantations after emancipation instead preferring to subsistence farm on small Crown land grants. More than Chinese DNA was left by these men, They added their food culture. The oxtail he is making is a Hakka contribution to Jamaican cuisine, Jamaicans love anything stir-fried(whether meats or vegetables), deep-fried or steamed, all methods of cooking from our Chinese ancestors. Sweet and Sour meats and fried rice are popular in Jamaica. The use of a cast iron "bush" wok is also inherited from the Chinese. Soy sauce and ginger are integral ingredients for Jerk chicken, ackee and saltfish being sauteed up in 5 to 10 minutes, That’s how you see Callaloo getting steamed on a high flame. They brought those techniques for cooking food in a rapid way.” The Addition of rice as a staple of every Jamaican meal from breakfast to dinner. The Jamaican obsession with adding ginger to everything. The stir-fried cabbage no Jamaican woman can expect to find a husband if it is not part of her repertoire is obviously a Chinese contribution. All of these things and more come from our Chinese heritage. Curries of course come from our South Asian heritage. Hey Quang! This happens for ppl living in SEA and then coming to North America; she mentioned her lips is dry, make sure u get her some lip balm!! Believe she needs that. They don’t really use that stuff in SEA but need in Canada!! Food is always looking amazing! Geese ‘migrate’ south during winter and return north for spring/summer.

I make my patty filling similar except I put in thyme and. I use Scotch bonnet peppers and bread crumbs also, I use powdered annatto and beef tallow for the flavor and coloring of the pattie dough
