I'm 75. I'm probably one of your older subscribers. I thoroughly enjoy your channel. Watching you reminds me of my 20s and 30s. Lots of energy and I used to help my wife at that time can, everything. Now I just cook for me and my 120 lb Chow Chow. He gets two meals a day. Beef in the late afternoon, shredded chicken at 1 in the morning after our nightly walk. Just for him, I go to 15 lb of ground beef 25 lb of chicken quarters a month. I processed the chicken in an old pressure cooker, from the 1970s. Like you, I debone the chicken and continue to make chicken bone broth. Before I freeze it, I put it into the refrigerator to separate the rendered chicken fat. I reheat the rendered fat and pour it into a silicone mold. That's what I use in place of butter. I also add it to his dinner every night along with the bone broth. I also reheat the jellied bone broth into one cup molds and into the freezer. I probably wouldn't go to all this trouble for me. But for my dog, it's a labor of love.

What u do warms my ❤️. I'm 79 and just canned 100 jars of Yellowfin that my son caught! I told him that's mammas last go around doing that! But always enjoyed canning!

We freeze our butcher chickens whole and when canning season is over I'll cook a few to make broth and can the meat. My mom loves chicken chili so I do several jars in order to make it for her several times during the winter months.

Good morning Meagan. I agree with you. I bought 3 butterball turkeys at Aldi after the holidays last year for $.49 lb so I roasted them canned all of them. I made broth too which I used for them. I make enchiladas, casseroles and last night made chicken pot pie with biscuits on top. So good and FAST. Thanks for sharing you recipes and skills. Your encouragement blesses many!

I bet that was amazing!! I freeze my left over turkey from thanksgiving and it makes some wonderful turkey and dumplings, I’m sure that broth is delicious!

I used ball lids last year . I made pickles, don’t we all, lol. I pulled a jar of pickles a couple of months later and it was not sealed. I started checking my lid. The vinegar in my pickles had eat through my lid!!! I pulled all my pickles and had to throw out 6 jars. All 6 jars had pin holes in the lids. I immediately ordered some 4 jar lids. I have used them all year this year. Water bath and pressure canned using 4 jar lids and never a failure. Y’all these lids are great! I won’t use anything else now. I love canning my meat. It makes preparing meals faster and easier.. We hunt and eat alot of venison. I can all my venison except for what we grind into burger. I love to pressure can. Basically you are cooking and preserving your meat all at one time. I think it’s a great time saver. Great video Megan. Just goes to show “canning season “ is really an all year thing.

I love it. I cook the bones for broth fora minimum of 30 hours. The Turkey bones go for72 to 80 hours. Best broth ever. I add nothing to it and the flavor is intense

When I can my chicken, I use the electric countertop roaster and set up 5-8 chickens on the roasting rack (depending on the size of your chicken and the size of your roaster). I leave the skin and bones in, then season the chickens as normal. When the chicken meat is roasted and falling off the bone, I pull the meat off the bones in big chunks and go straight into the jars. Then I fill the jar to 1" with last year's homemade chicken stock from my pantry . Then into the canner. While the chicken processes, I continue to cook the drippings and bones, cartilage, veggie scraps from freezer, and 10-16 cleaned feet with 1 quart of filtered water for every chicken I roasted. I simmer on 250° overnight, and then the next morning, I strain the stock and fridge it overnight. The Day 3, I pull the fat off the top of the stock, then jar the stock and can it too. The feet add great Collagen, and the roasting improves the texture for my finicky kids. Plus roasting gives a boost to the depth of chicken flavor.

Try using the big roaster pan you don’t have to watch it so close. You can put 3-4 chickens in it.

I love chicken canned this way better than raw packed. I think the texture is better for one thing. I can eat that cold lol, so it makes good chicken salad as well as great for any casserole.

You know, I was watching your sorghum videos and wanted to ask you if you could make corn syrup the same way. Wonder what you would cook down were you to run corn stalks through that machine. I could Google it, but I think it is more fun to ask a real farm family.

Well I had never heard of this and red about it, apparently it’s a thing! You can make corn syrup from corn stalks that don’t produce an ear, who knew!

Because if they are full because of the air in the apples the pressure will cause them to press out of the top (believe me I learned from experience 😂), it’s actually the perfect amount of apples for what I will use them for ☺️

Hi there. I’m wondering on the apples do you think the pressure amount would need to be adjusted for elevation? I’m at a high enough elevation to have to can at 15 pounds. One thing I did this year with my peppers was either roast or grill them, then pack jelly jars and top with water and can. They turned out great. I just hated having my entire harvest in the freezer.

Thank you for showing this. I have been thinking about canning some chicken but debated raw or cooked. Now i know cooked is the way to go. Getting the broth is an extra bonus! Did you season the broth with anything else other than salt?

It’s texture is the same as store bought canned chicken, it’s not mushy at all. I love doing it that way because you also get so much extra chicken broth as well ☺️

Not sure if anyone will see this question but.. I don’t particularly care for store bought canned chicken. Is there a difference in the taste?

Absolutely, there is a difference. Store bought, you don't know what meat or not meat your getting mixed or hidden into it. With home canning you know what you put into the jar and that meat will be packed with flavor.
