Being portuguese and azorean, I've grew up eating São Jorge cheese on a regular basis. As a young boy, I've seen my mother buy São Jorge cheese from our local neighbourhood small grocery shop, where the big 10kg wheel of São Jorge cheese was resting on the counter top, aging naturally, and being cut to client request, in wedges of tasty delicious cheese. I still remember the smell of the cut...heavenly happiness filling the air into the depths of our very souls. How I miss all those days...❤ It's a beautiful cheese. Accompanied with a fresh baked azorean bread, still worm if possible, azorean "Milhafre" butter...humm...so good. Also with marmalade and crackers. Or sliced green apples. Or just by itself, with a good portuguese red wine. Beautiful! 😊

Being Portuguese, I've had my fair share of São Jorge Cheese. While your pronunciation could improve a bit (it's a hard language, can't blame you!), The cheese and consistency looked like that of the São Jorge. It's a bit of a heavy cheese, with a very strong (and a bit spicy) taste, so I guess you got that right too! Been following for a while and finally found a reason to comment. All the best!

Would recommend looking into Serra da Estrela cheese. Its present in every (a bit on the more posh end) party in Portugal and we always crack one open for the festivities!

Nothing personal, I’m a fan of your channel, just pointed out a couple things because this cheese is life in most Portuguese homes. There is no “Eee” sound at the end. Sao Jorge pronunciation is like “Sound” without the d at the end. Jorge pronounced like the 2nd way you said it. Also, there are more than one type of this cheese, one being “Topó”, the other being “Loral” (spelling). Topó is more crumbly, dryer and much sharper. Also, comparing this amazing cheese to Cracker Barrel put a nail in the coffin of a pretty close, well done review. Either way thanks for including our small culture into your channel. 🥂

Wrong video, but I NEED HELP! I just started my first “real” cheese, the petite chili Brie. I’m at the ripening stage, it’s been sitting for 3.5 hours, and the pH is stalled at 6.36. And, I’m measuring with an Apera instruments pH meter. What would cause that? Bad starter culture? I’m sure I’ve done everything correctly (temp, timing,etc) correctly to this point. What should I do?
