This really gets to the heart of what I think your channel is all about, making cooking manageable. Many of these ingredients I've stayed away from at the grocery store because I was never shown how to handle them. I bet there are a lot of people that will not be so intimidated by a simple vegetable anymore. Thank you for doing this. You have a natural gift for teaching and cooking.

@@ChefJeanPierre Please don't retire, chef! My personal cooking has improved vastly since watching your channel and it's because you've demystified the process. Dishes that used to take me 90 minutes to cook now take me less than an hour because I don't need to follow recipes anymore. A recipe tells you WHAT to do, and sometimes HOW. But you teach the WHY, and when you understand WHY then everything else comes naturally. Thank you, chef! God bless!

@@CreativeCookingVideos CC, the best answer I can think of is a question…. Who did you learn the most from in school, the monotonous boring teachers or ones who made the subjects interesting and fun? While ‘entertaining’ isn’t an absolute requirement, I think it increases retention and ultimately viewership. I think less people would fully watch videos the length Chef JP’s vegetables video without his entertaining presentation. Of course, not many of us could aspire to have his experience and teaching skills, but I’m confident that there are always to improve.

My husband and I both grew up watching you as children! I just found your channel a couple of days ago for the first time! I am HOOKED!! I watched your top 10 recipes first in one sitting (pausing only to cook dinner) and now feel like I'm catching up with your veggie videos. I loved them as a child, and would watch with my mom, then help her cook what you made. It is awesome that you are online now, and I feel like a kid again! if u like butternut squash, save those seeds you scoop out, clean them off and get them in a nice empty patch of garden, butternuts and pumpkins are super easy to grow, they take a long time to get to maturity but they keep for a long time too,

I think it would be very useful for the Chef to go to a market and show us how he selects everything. I live in an area where I am fortunate to have seasonal produce from local farms, which I patronize. I loved the tip about how to tell if asparagus was old. I hate it when I try to buy an avocado and they have all been damaged by folks trying to find a good one. The possibilities are endless!! Thanks!!

When I first started dating my husband (I was 17 and he was 20) and would go to his mom's home for dinner, she would teach me how to cut veggies. I remember having a notebook and would draw pictures of the veggies as she cut them up. 😊 I was fortunate to have the most wonderful woman as my mother in love in my life for 42 years.

Thanks so much for sharing this lesson. I appreciate the fact, you had arranged the vegetables in alphabetical order, so it is each to go back and review a particular section of your class. I especially enjoyed the ONYO. Plus the time you had spent putting up the video, saying thank you is not enough.

I'm near 64 years old and FINALLY diced my onions properly. Wow! That makes it so simple and easy. My thoughts turned to that scene from Julie and Julia when Julia Child had just completed chopping a mountain of onion. And yes, I did cry! Thank you Chef Jean-Pierre!

Tip for using the Paring knife to remove roots or heads or specific spots on vegetables: I used to cut myself all the time doing this, then I realized you're suppose to ROTATE the vegetable/fruit, not the knife. Hold the knife firm in your hand with your thumb close to the tip of it, then rotate the vegetable around it. Hope it helps!
