I tried a quiche recipe once from Cook's Illustrated that recommended laying the cheese down first on the bottom and melting it with a quick blast in the oven, then taking the pan out again to put in all the fillings. It forms a barrier between the bottom crust and all the other ingredients, so it doesn't get soggy. Works like a charm... but then you don't get that absolutely lovely browned cheese on the top like yours has! Maybe the answer is to do both! 😆

I like it warm rather than cold. I use spinach, onions and mushrooms and no pastry. But I think I will try the pastry next time. I have also made it with homemade hashbrowns on the bottom too. Just call it DELICIOUS.

With filo pastry,we usually brush every layer with a thin layer of melted butter...before adding any toppinh/filling to it

I quite often make this with or without the pastry too, i dont have a name for it either Lol. For a taste change i add sour cream to the mixture as well, its great because you can add anything.

Love the grill on your new stove! Noticed your cutting board. I'm wondering if you like using it. I found that type quite unforgiving and slippy unlike a wood board would be. Looks yummy!

You could make this Greek style. Lay 2/3rd of the filo sheets with the long side across the pan (one half of each sheet in and the other half out) brushing melted butter or olive oil on each sheet inside the pan, add the filling, fold over and in the outside of each sheet (again brush butter or oil), and end up brushing butter or oil on the very top.

I butter each sheet of filo as well and you could fold all the pastry around the top in over the filling, hot out of the oven for me though.

I love these extra recipe videos. Looked delicious too. I would definitely add other veg. I tend to make mine when I have plenty of eggs and leftover cooked potatoes. I put Parmesan on top as well as cheddar for an extra hit of flavour and blue cheese inside is fantastic if you like it.

Put a glass of water by the cutting board when chopping onions, the sulfur migrates to the water in the glass rather than the water in your eyes. No tears.This is less wasteful than leaving the water running from the tap while chopping.

My mom made zucchini fresh fries to use up our zucchini. Fried in oil like French fries. Ate them with salt and ketchup.

For all veg cutting I use a Japanese style knife, kept super sharp. I find that blade shape most useful for veg.

Placing your pan on a larger preheated pan may make it easier to handle, looks like you were having a little problem there. The heated pan under the frittata pan will also help you to not have a soggy bottom. It looks really good.

Australians love a pie... Remember those FourNTwenty pies when they were full of meat. Yours looks like a fabulous Courgette Pie. Possibly try some feta, rice and lemon zest one day. (just keep staying away from that spray on oil... Olive oil or butter is better!

I think the Spanish would call it a kind of tortilla. Flan is actually a custard dessert. But I feel like it is mostly like a quiche. Thanks for the recipe and the sneaky way of incorporating courgettes/zucchinis. I am confused about why there is this problem with Fahrenheit versus Celsius. They are both base ten so there is no real advantage of one over the other, unlike metric length, weight and volume measures which are certainly easier and superior to the old English system of measurements. It doesn't matter with temperatures. Six of one... Saludos desde Asturias.

Any recipe to use up my zucchini is appreciated. My quick recipe is grated zucchini and egg if I feel like taking the time I salt and drain the veg and maybe add flour to make it a pancake/patty. If I want to be fancy chop onion,pepper…other veg and season to taste.

I have looked it up. Flan is British, quiche is French both cooked in the oven. Frittata is partially cooked on top of the stove, partially in the oven. There you go, everything on the internet is alway accurate, isnt it!? Ha ha ha.
