They look great! I'm trying these. I'll have to switch it up a little. I'll have to use toffee or butterscotch chips though. I'm allergic to chocolate. But these look very customizable!

I have never used marshmallows in place of coconut, but sounds like a tasty sub. I would suggest using the mini marshmallows.
