For a tangy tomatoe sauce try sautéing Blended Equal parts of Celery, carrot and onions. Then add your tomatoes and tomatoe sauces. Add basil oregano or thyme fresh or dried.

Yes, I can just envision you whipping your top instead of grabbing an apron! Using a slow cooker, or roaster, as you call it, is a brilliant idea. Chuck everything in and let it cook. It sure beats standing at the stove like a Hawk to avoid scorching your sauce or heating up the kitchen. I may try this method next year. My tomatoes were done two months ago after I discovered a rat family in my garden.

I usually do whatever the heck I feel like in the kitchen except with canning, though even there, I'm more middle ground. I do watch the level of low acid additions, and I also use a pH tester to determine the pH of a batch of tomato sauce (because science). If I have low acid inclusions though, I will always err on the side of pressure canning that batch, just to ensure safety. If you aren't sure, and aren't interested in playing with food safety, pressure can or freeze this recipe (which looks delish)!

All roasters are not equal...its great...if the enamel doesnt peel off during the cooking process. I learned this the hard way after it peeled in my sauce...so much for that batch🤦😔 I may try the one you suggest..but am terrified of a repeat performance.

I use my roaster all the time for sauce, you can make a lot all in one time.. Mine simmers for 2 days, it's great for making stocks too!! 🙂

You could, but that may puree it. Using an immersion blender allows you to control whether you want it chunky, lumpy, or smooth.
