I have a 2023 Ryker 900 Sport and the handgrips are fine for me, but I also have small hands for a guy.

You mean rider seat? Its "just" High end driver seat kit & show chrome backrest. BRP part is 219400795 and show chrome is here www.martinthevlogger.com/product-page/quick-detach-backrest-for-the-can-am-ryker-2019

Why remove the throttle ? To remove the old grip just use the compressed nozzle insert it between the grip and the tube . Never ever needed to glue grips on .. use hand sanitizer to lubricate the grip to put it on .. evaporates away , Personally I hate large grips , they cause cramping :)
