I used this kind of cookie depositor when I was a commercial baker. They're pretty good for a small bakery, and once you get some experience, you'll be able to crank 'em out much quicker than you did in the video.

Hi -- It will work with less, but it does take some dough to get the gears working. After you've run the dough through, scrape out the extra and use a scoop to portion those. It does take quite a bit of time to clean the machine after you're done, so you'll probably want to make a good sized batch while you've got the machine going anyway. I usually make quite a large batch (40 lbs.), run all the cookies out and freeze the ones I don't need right away so I only have to clean it once.

Hello Mr. QO. My dough is stiff, and, my cookies are just 1" in diameter and 3.9mm thick (2 nickles stacked). Do you know if there are dies that small and if the machine can cut through the stiff dough? Thank you in advance for your speedy reply. And, As others are asking, what is the "median" price--do you know?

Thanks for posting this. I've seen other videos of this machine complaining that it doesn't work with mix-ins (chips, raisins, etc.). Could you share your experience in this regard? How long does it take to clean the machine and is it tricky to reassemble after cleaning? Have you had to replace any parts?

Do you mean 1/4"? Yes, it can do that. The problem that comes up if it gets too thin is it might not drop properly and just hang up on the wire (then fall off in a clump at some point later.)

@kendigjl Yeah, it saves a lot of scooping, but I've noticed one of my cookie recipes won't work in this -- I think it's too buttery. It just kind of spins instead of pushing through. Did you ever run into that problem? I've tried chilling it and not chilling it, but it doesn't seem to help.

I think they'd be great for dog treats -- there are all kinds of shapes available, but the forms are expensive, but sometimes you can find them on ebay for cheaper

@qolson1 I don't recall having that problem. Have you tried putting some kind of weight on top of the dough to help push it down? Or if your dough is too cold/stiff, have you tried letting it warm up a little? Maybe you could give it a couple of seconds in the mixer to make it more workable (vs leaving it out on a counter for a hour or two)? Good luck!

The only time I've had a problem was when I tried to use a very soft, buttery dough. It's a cookie that has butter, powdered sugar and corn starch. It seems like the gears just spun in the dough and didn't push it through. But for all the other cookies, it's worked fine. I think it just needs more structure to the dough in order to work correctly.
