日本醬油糖心蛋
材料︰雞蛋4隻醃蛋醬汁︰砂糖 2 茶匙、味醂 一湯匙,日式豉油 1-2湯匙、鰹魚汁兩2湯匙,水 2湯匙。
做法︰
1. 把雪櫃的雞蛋取出浸在水中最少10分鐘回溫。
2. 煮好一鍋水後放入蛋,水位線剛好蓋過雞蛋表面,計時5-6分鐘後熄火。(想更加生少少流心,可煮5分鐘)
3. 隨即把雞蛋放入冰水降溫,浸大約6分鐘然後脫殼。
4. 將所有醃蛋醬汁攪勻(用熱水座著),待醬汁及糖混和,把雞蛋放入糖心蛋容器(或密實袋),存放雪櫃浸雞蛋一晚即可食用。
