It's their pride and it's their culture, so if you do what they think idiotic then they will tell you you're do some idiotic thing and tbf they do make great food. Even if you're in America and go to Louis lunch (oldest running hamburger place) you will get kicked out if you ask them ketchup (literally) or if you go to on traditional side of any burger place, they strongly recommend you to not use ketchup. also some of Texas bbq will offended if you ask them sauce for bbq

I do recall meeting a very sophisticated Italian guy once and telling him that I really enjoy Italian Food which I do. He gave me a very unimpressed and bored look like he had heard that phrase a million times and said in a very cold tone “Oh…Really?” with a blank stare. I then described exactly what I had which was a type of egg pasta with a four cheese sauce. I told him exactly the types of cheeses in the sauce (I think they were Parmeggiano, Gorgonzola, Fontal and Pecorino.) His expression changed in a flash to one of shock and appreciation. That me a foreigner knew what Italian Food was. He was like “Oh My God…Now you’re talking! That’s the kind of food I grew up with!” He was much nicer to me after that. Don’t think I’ve met anyone more passionate about their food than the French, Italians and Spanish.

Gorgonzola in a pasta sauce is intense. I used to make a red sauce with Gorgonzola, and it was fierce. You really smell the farm with that one.

@@mikeoxsbigg1 It is powerful stuff Gorgonzola is and has a very complex array of taste dynamics. That’s why it was very carefully added to that four cheese sauce I had but it merged nicely with the others. That sounds awesome in red pasta sauce though. I used to make one with Pecorino.

@@vinaymulukutla358 I used a homemade Italian style tomato sauce. Take some aside in another pot. Prep the gorgonzola by melting it with butter in a pan. Mix into red sauce.
