My grandfather was from Cornwall and he would do something similar to this- if I remember right he used string on the ribs to clean them- excellent video- anything with rabbits reminds me of him!

Scott, you are a certifiable nutter - I absolutely love your channel ! This one was just mad. Rabbit is a much underrated meat, totally delicious and one of my favourites. Was it worth all the work ? Debatable. But the finished product was undeniably mouthwatering. Another winner ( well, would we expect anything less from you ? ).

Hey Scott, I love this recipe and I’ve used it several times. I know it’s been a while since you’ve posted this vid and perhaps you have some other techniques but I really like Rogers Powell video of butchering a rabbit, specifically when he makes the rabbit racks. It’s pretty quick, and you might enjoy the time savings. Love the channel! Greetings from Nova Scotia!

Nice job. I love rabbit, but not easy to find. A store nearby started carrying rabbit from China and they tasted OK, but I stopped buying - prefer fresh local. I occasionally shoot them, but not enough to make those racks! BTW, I made your roasted potatoes tonight for my Irish American wife. She loved them!

I remember having square sausage in Scotland years ago, it's hard to find in Northern Ireland. You can get it at Iceland, but I'm sure it's nothing like the real thing.

hey Scott.new fan.great channel great bids.I'm a butcher myself,and worked as s chef also. I'd like to say I know my stuff. u are an artist my friend very talented butcher, a good chef too. mate I wanna ask u if u know any good recipes for tripe????? I know a lot of elderly people who eat it with just salt pepper n vinegar!also I used to have an elderly customer who used to buy a shin of beef and had me cut n saw into rings. she cooked it whole n made a stew with it.this lady had the most beautiful skin,after talking to her n commenting on it,she told me that it was down to the natural cologen in the shins of beef that she ate regularly. it made sense to me,,and the proof was written all over her face so to speak. if u agree, will u bring it to your viewers attention???? loving your work mate,I think its brilliant your keeping our fantastic food heritage alive.keep up the good work buddy. let me know bout the tripe n shin mate.awesome channel.peace out.Joe.

How about rabbit, pheasant, chicken any other game that has about the same size where they could be done like a crown roast. Make a meat and stuffing keeping the largest chunks of meat whole and grinding the rest into some type of Frankenstein sausage. Yea I know I just said about 17 straight hours of work but man!! Times like these I really hate myself because I will be saving a lot this hunting season. Serious question: Do you think the ribs from a catfish could be worked into this? They will start biting around here in May, so I got to wait for a little longer. Sorry for the long winded.

Hi Scott. Could you make a video some time of how you clean that large block of wood? ... For meat I use small plastic boards so I could put them in the sink to clean, obviously you can't do that with the large cutting board. ... Very interesting and very skilfully executed. I don't think I have ever heard of rack of rabbit before, so well done for this unique video. I shudder to think, if this was prepared at a GOOD restaurant given the time involved and the minimal end product, what the menu price would be! I will be making your rabbit with mustard this weekend; have asked my local butcher to secure me 2 rabbits and then Sunday night should be very flavourful :)),

I don't think I would ever take the time to make these just simply because the time and effort that it takes to prepare them and what you get out is so small. When I combine that with the fact that my wife only likes chicken it is a lot of work for one. I am glad that I watched it thought because it is a differing preparation method for buggsy. Having had a widow maker myself, I am trying to change my outlook on life and change my proteins and make them more wild fare as often as possible.

no mate u don't need go college. just go n hound your local butchers.n be enthusiastic, most butchers love their trade. I started in a small shop.good butchery is an art.I learned the trade young and worked in a slaughterhouse too. if you're serious, u won't regret it. its a very satisfying trade. if you're thinking shop, it helps to be a 'people' person getting to know your customers!! as I said, go and simply ask your local butcher.good luck buddy.joe

PS.there are courses here in English college's. I'd consider it the worst place to learn butchery. on the job training is the best. a small shop probs the best for u.you'll get paid,and you'll learn the shop work which is a big part of the job.peace,Joe.😊

how many of these 'racks of rabbit' would be served in a portion as one side of ribs is rather small? Its more like finger food than something you would stick on a plate with veg and whatnot

What do you think of using all of the flap meat for sausage? I once made some breakfast sausage out of choice cuts of a rabbit I was butchering. I didn't have any pork fat other than bacon, so I used that. It turned out ok, but I I would rather use the flap meat for sausage instead of stock as I feel that it would be using it more efficiently. Since we raise the rabbits, we are always interested in maximum efficiency.

We raise rabbits for meat and we love the ribs. Like you say, it is a some extra work, but definitely worth it.
