উনিশ বছর ধরে ঢাকায় থেকে একটা ব্যাপার বিস্ময়ের সাথে লক্ষ করেছি- এই শহরের রেস্টুরেন্টগুলোয় ভাতের সুব্যবস্থা নেই। ঢাকায় কেউ যদি সেরেফ ভাত আর ভর্তা-ভাজি খেতে চায়, তাকে যেতে হবে এক থানা পেরিয়ে অন্য কোনো থানায় কিংবা এক সিটি করপোরেশন থেকে অন্য সিটি করপোরেশনে। ভাতের হোটেল যা আছে, তা যারপরনাই নিম্নমানের। যেসব রেস্টুরেন্টে স্বাচ্ছন্দ্যে ভাত খাওয়া যায়; সেসব রেস্টুরেন্টে ভাতের দাম কয়েকগুণ বেশি এবং সেখানে ভর্তা-ভাজি পাওয়া যায় না, পাওয়া গেলেও দাম গলাকাটা। সেসব রেস্টুরেন্টে ভাতের সাথে বাধ্যতামূলকভাবে গরু-ছাগল-মুরগির মাংসই খেতে হবে, রুই-কাতল-রূপচাঁদা মাছই খেতে হবে। এর বিকল্প নেই। কেউ যদি ভাতের সাথে সেরেফ ডাল আর ভর্তা-ভাজি খেতে চায়; রেস্টুরেন্টের কর্মীরা তার সাথে ঔদ্ধত্যপূর্ণ আচরণ করে, পাঁচবার ডাকলেও কাছে আসে না, কাছে এলেও টেবিলের ওপর খাবারের থালা সশব্দ ছুড়ে মারে, সালাদ দেয় না, টিশু দেয় না। ভাত খেতে চাইলে রেস্টুরেন্টে ঢুকতে হয় চোরের মতো, বেরিয়ে আসতে হয় চোরের মতো। কাচ্চি অর্ডার করলে কিংবা ভাতের সাথে গোমাংস-ছাগমাংস বা রুই-কাতলা চাইলে কর্মীরা রাজকীয় প্রটোকল দেয়, 'জো হুকুম জাঁহাপনা' পর্যায়ের বিনয় নিয়ে খাবার পরিবেশন করে, চাওয়ার আগেই আনুষঙ্গিক জিনিশপত্র নিয়ে তটস্থ হয়ে দাঁড়িয়ে থাকে, তাকায় অন্তর্মুখী সপ্তদশী লজ্জাবতী নববধূর মতো; গামছাটা দিয়ে কিছুক্ষণ হাত মোছে, কিছুক্ষণ কাঁধে ফেলে, কিছুক্ষণ টেবিল মোছার অভিনয় করে। কর্মীদের ধারণা- যারা ভাতের সাথে সেরেফ ভর্তা খায়, তাদের বখশিশ দেওয়ার সক্ষমতা নেই; তারা টাকার অভাবে ভর্তা খায়। এই শহরে এমনকি আটা বা ময়দার সাধারণ রুটিও নেই। এখানে রুটি খেতে চাইলে বাধ্যতামূলকভ্যবে ধরিয়ে দেওয়া হবে 'নান' নামক পুরু বস্তা। ঢাকার রেস্টুরেন্টগুলো যেন তেহারি, পোলাও, কাচ্চি আর খিচুড়ির অঘোষিত গুদাম। চতুর্থ শ্রেণি থেকে শুরু করে প্রথম শ্রেণি- সব রেস্টুরেন্টে এই চার প্রজাতির তৈলাক্ত খাবারের ছড়াছড়ি। এই খাবারগুলোয় এত বেশি পরিমাণ তেল আর মশলা ব্যবহার করা হয় যে, টানা তিনবেলা খেলে যেকোনো ব্যক্তি অসুস্থ হয়ে পড়বে। রেস্টুরেন্টে কেউ তেল-মশলাবিহীন স্বাভাবিক খাবার খেতে চাইলে ঢাকা শহর তার জন্য কোনো সহজ ব্যবস্থা রাখেনি। এই শহরে কোনো ব্যক্তির ঘরে দু-দিন রান্না না হলে দু-দিনের ছয় বেলাই তাকে কাচ্চি-তেহারি খেতে হবে, পকেটে টাকার বান্ডেল নিয়ে ঘুরেও সে ভাতের দেখা পাবে না, ভাত তার জন্য বাঘের চোখের মতো দুর্লভ। অথচ কোলকাতায় দেখে এসেছি মির্জা গালিব স্ট্রিট, মার্কুইস স্ট্রিট, সদর স্ট্রিটের মোড়ে-মোড়ে এমনসব ভাতের হোটেল- যেখানে যেকোনো ধরনের ভর্তা-ভাজি-শবজি পাওয়া যায় মোটে পাঁচ-দশ রুপি দামে, কবজি ডুবিয়ে গোমাংস আর চনার ডাল দিয়ে ভাত খেয়ে উঠলে বিল একশো রুপিও আসে না, সেখানকার কোনো রেস্টুরেন্টে ভাত চাইলে কর্মীরা ক্রুদ্ধচোখে তাকায় না। সেখানে তিন রুপিতে পাওয়া যায় আটার ছোট্ট রুটি, দশ রুপিতে খাওয়া হয়ে যায় রুটি-শবজি। আমাদের ঢাকা কবে থেকে ভাতবিরোধী হয়ে গেল? ঢাকার রেস্টুরেন্টগুলো থেকে কেন কী প্রেক্ষিতে ভাত বা সাধারণ আটার রুটি বিদায় নিল? আটার রুটি আর ভাত ঝেঁটিয়ে ঢাকার রেস্টুরেন্টে তেহারি-কাচ্চি, পোলাও-খিচুড়ি, নান কীভাবে আস্ফালন দেখানো শুরু করল? এর নেপথ্য ইতিহাস কী? ঢাকার নাগরিকদের সবাই কি তা হলে এখন মুসা বিন শমসেরের মতো 'হিডিয়াসলি রিচ'? © আখতারুজ্জামান আজাদ
