The story goes that this mutton curry recipe is served in all First Class compartments on Indian trains.

Ingredients:
Ingredient Measure Units
Mutton 500 g.
Mustard oil 2 tbsp
Red Chili 3 Number
Whole garam masala (each) 2 g.
Pepper corns 1/2 tsp
Fennel seeds 1/2 tsp
Bay leaves 2 Number
Onions 1 Number
Turmeric 1/4 tsp
Ginger garlic Paste 1/2 tsp
Green Chili 2 Number
Salt to taste
Potatoes 100 g.
Tomatoes 100 g.
Cumin powder 1/2 tsp
Chili powder 1 1/2 tsp
Nutmeg powder 1 pinch
Vinegar 1 tsp
Tamarind juice 1/2 cup
Coriander (chopped) 1/2 bunch
Directions -- Method:
1. Heat mustard oil in a pan red Chili, whole garam masala, pepper corns, fennel seeds, bay leaves, sliced onions, turmeric, slat cook it some time.
2. Add ginger garlic Paste cook this till raw flavor is gone.
3. Add green Chili, potatoes and add parboiled mutton water, put the lid on and let it cook till potatoes are 70 % cooked.
4. Then add cumin powder, Chili powder, nutmeg powder and add mutton pieces (parboiled), tomatoes and add some water and put the lid on and let it cook for 10 minutes.
5. Add vinegar, tamarind juice cook for 2 minutes then add chopped coriander switch off the flame.
6. Serve this with Rice and chapathi.

I dont know if there is any Highest award like Bharat Ratna in Culinary. If at all it is there i would give it to you. You dont know how much you have entered my Kitchen and my family just love me making your dishes every week. THE BEST WAY TO ENTER ANYONE'S HEART IS THROUGH HIS/HER STOMACH.

isn't railway mutton curry supposed to have coconut milk and curd? these two ingredients mellow down the flavour, which was the demand of the British officer on the train who found regular Indian mutton curry too spicy, thus the chef added milk and curd.

I was suppose to tell the same thing - that Sanjay forgot to add coconut milk and yogurt to balance the heat from all the spices.

There are no measures mentioned for the spices & it would help if all the ingredients are mentioned before cooking

Because apparently this curry was made in the pantry car of a train on the demand of a hungry British soldier :)

Chef you are cool and inspiring, your dishes are awesome, accent is okay, everyone has an accent showing which part of globe they are. You don't need make up, who gave you that wrong advice. Just concentrate on dishes.

+Steve Wright Cloves, cardamom, cinnamon, shahi jeera/black cumin, bay leaf are the whole garam masala spices. You can use any of these or all of these depending on the dish that you are making or the availability of the spices.

I'm sure you could. You could try with young lamb.. similar flavour but much milder.

This is goat meat which he is using..in many parts of the British Commonwealth "mutton" is used to describe goat meat...and not sheep meat...the right word for goat meat is "chevon" but mutton has gained the legitimacy of usage...hope this helps,in case you are confused!!!!:)

i think what he means is that in some east asian countries, when they'll serve you a goat preparation they may sometimes call it mutton, and people liken the taste of goat to an old sheep. it's an old variant of the variety of animal meats ending up 'tasting like chicken'

Train Cuisine is hardcore crazy, shit is sliding all over the place. ... Well at least in India. In the UK they just microwave a burger rather than cooking things fresh.
