Yes! Honey is like gold to me too. I won’t bake with it either. It’s too beneficial for our health to destroy it or use it in ways I won’t directly benefit from. I plan to be come a beekeeper in two years if all goes well. I’m super excited.

Right! It is rare I use honey in anything I am going to cook as it will ruin the benefits. I use it in my cold and flu syrup but do not add it in during the cooking process, only after it is done and has cooled to room temp

While I knew mead exists, as a retired nurse I wondered about this very thing. Being now retired, I have been getting more into fermenting and brewing and this information could not have been more timely for me! I know I already love mead, a little once in a while because I seem to be missing a sweet tooth. I have set myself the task of brewing a beer and a mead this winter. I'm doing my research between garden and food preservation tasks. I'm unable to keep bees, being allergic to their stings. Allergic as in a medical emergency. I find them fascinating and adorable, and sorely wish I could keep a few hives. But such is life. I'm very stingy wiith my honey. Thank you!! Hugs and blessings. ;)

When I wanted to walk away from refined sugar, but also enjoyed a glass of wine a few times a year, I called my local winery whose claim to fame was their mead. I asked the owner (to make sure) that they were using honey to make their "mead". He Laughed at me and said, 'Of course not', honey PREVENTS fermenting!' Wow, what a fibber he was! I have fermented many things with honey in the years since then. It never hurts to ask questions, especially when it goes in your body. I have relaxed my attitude about sugar and now use non GMO raw cane sugar - from time to time. Thank you Heidi! I love your channel! P.S. Made my first order today with Mother Earth Products! Looking forward to trying out the yummy freeze dried fruits and veggies I purchased!

And honey really is gold. I don’t eat sugar so honey and fruit is my favourite snack/desert lol. Honey is life!! And now that I know it can be used for ferments I got even more use for my weed plants lol.

I’m a bit leery of light colored honeys because I was buying some from a guy at our local market until he divulged that he feeds his bees sugar water regularly, not just as a last ditch effort.

Interesting but honey does come in various shades also depending on the flowers they collect from. I have a good friend that was keeping bees and I know they were as natural with their bees as could be and their honey was pretty light in color. Since they had a lot of blackberries growing wild behind their property, I am sure most of it came from those

@@RainCountryHomestead It would certainly be different if I knew for sure a source of honey was using best practices, but otherwise for a couple of years now I go for the darker colors. There’s no actual way for me to tell for sure, but it’s one precaution I’ve been using since that incident. I briefly had a hive for one season before my bees absconded in the fall when hordes of wasps attacked them 😥. So I am just a novice trying to make the best choices I can. I really enjoyed it, but I don’t think I would do it again with purchased bees. At any rate it is good to know that not all light colored honey is just sugar water processed through bees. 😉

Many will differ depending on the herbs but most are best when cut before flowering

Thanks for your lovely videos. I want to ferment my vegetable as an option for long term storage. Once I ferment the vegetables can they be put away to use in a year or 2 ?

I keep my fermented veggies in the fridge, that is my personal choice. They can keep for a long time on the shelf but I doubt they will keep for longer than a year unless you are keeping them in cold storage

you can make vinegar from only raisins since they are high in sugar but you still need to add quite a bit of them so you may want to still add honey so you do not need to add so many raisins

Thank you for the video. Well fermenting garlic with raw honey is what many people do right now but my raw honey has cristalized whichvis natural and so I wondered if honey water would do the job too and it does. I dissolved some honeyvin lukewarm water and will ferment my garlic and see if it will bubble in 3-5 days. How can honey thats super old can still be liquid because thats not normal?

I have heard that honey that is not raw does not crystalize but I am not sure that is true. I have also heard that cheap honey is not always all honey but has been mixed with corn syrup, so that could be another possibility but I am not sure how true that is either

My raw honey is crystallized, can I still use that? I want to do honey/garlic/black seed but if it's crystallized I don't know how to make it coat the garlic...and if I set it in hot water I'm afraid I'll overdo and it won't be raw anymore.

If you set it in a bowl or pan of hot water straight from the tap but do not heat on a burner, it will not harm it

Not for fermenting. It may work but molasses is high in minerals which can slow or prevent a ferment

You can try to ferment milk with it but it will not be yogurt specifically because yogurt is a special type of culture. I have never actually tried it to ferment milk yet.

I am guessing by "the woman" you are referring to me and yes, I have been fermenting eggs for years. Some will say it cannot be done but it can and they are quite good. I prefer them over plain hard boiled eggs myself. I typically like to add garlic and red pepper to the process. I have a few videos showing how I do it.

I made fermented lemon slices and raw honey and ignored it for a while....the lemon rinds are dark and the taste is pretty bitter. Did I ruin my fermented lemon liquid, or is it still good to consume?

It's made with lemons and their rinds, so the bitterness is probably to be expected. Fermented fruit rinds to tend to turn color during fermenting.

Do you have to dehydrate herbs to turn them into extracts or can you use fresh herbs?

It depends both on the herb and the type of solvent you are using in your extract. Fresh herbs should really only be used with high proof alcohol and the jar packed tightly because the moisture content in the herb itself will water it down. Dehydrated herbs can often yield a more concentrated extract but on the other hand, the dehydration process will destroy a small amount of the nutrients in the herbs.
