Rajapalayam Aval Upma | ராஜபாளையம் அவல் உப்மா | Ammavum Naanum - Episode #58 | Rakesh Raghunathan

An upma made using aval (flattened rice) in the region around Rajapalayam.

Ingredients: Lentil crumble
* Channa dhal
* Toor dhal - ½ cup each (soaked in water)
* Cumin seeds - 1 tsp
* Red chillies - 5 nos
* Salt &Turmeric powder
Ingredients: Upma
* Flattened rice - 2 cups (soaked in water for 10 minutes)
* Carrots, Beans, Capsicum, Fresh peas, Cauliflower - ¼ cup each (par boiled)
* Cashewnuts & grated coconut- 2 tbsp
* Bread crumbs & Curry leaves
* Mustard seeds - 1 tsp
* Urad dhal - 1 tsp
* Curry leaves - 1 sprig
* Bread crumbs - 2 tbsp
* Grated coconut - 2 tsp
* Oil - 2 tsp
* Ghee - 1 tsp
Method:
1. Wash and soak lentils in water for 30 mins.
2. Drain water and grind to a coarse paste along with cumin seeds, red chillies, salt & turmeric.
3. Steam this paste in idly. Set aside to cool.
4. Crumble this lentil idlies to a powder.
5. In a wok, heat oil & ghee.
6. Once hot, add mustard seeds, urad dhal, curry leaves & red chillies.
7. Add the parboiled vegetables & sauté well.
8. Add the crumbled lentils and mix well.
9. Check for salt.
10. Drain the soaked flattened rice and add that to the sautéed vegetable & lentil mixture.
11. Garnish with roasted nuts, grated coconut, curry leaves & bread crumbs.
12. Serve hot.
