These profiles are standardized throughout the industry by a body called JEDEC. These profiles are programmed in to all DRAM DIMMs in the form of a Serial Presence Detect (SPD) table. DRAM from all brands must support one or more of these profiles. E.g. some standard DDR4 profiles are for speeds like 2133MHz, 2666MHz etc. which can be seen with tools like CPU-Z under the Memory tab as SPD Information. However, not all DRAM chips are created equal even if they might be from the same manufacturing batch. Some are capable of hitting higher speeds, lower latency and can withstand slightly higher voltages which makes them more appealing for overclocking. These so-called "binned" chips are used for making faster DIMMs which go beyond the standard JEDEC profiles. E.g. kits rated at 3600MHz, 4133MHz etc. AFAIK, the JEDEC standard stops at 3200MHz. So, the SPD table of such DIMMs have additional data that indicate the timing (latency) and voltage requirements for sustaining these higher speeds. These are Extreme Memory Profiles (XMP) but this is an Intel-specific term. If I'm not wrong, the AMD equivalent term is DOCP.
