Packed full of flavor, this ramen chicken salad makes an exceptional meal or can be used as a side to complement a larger spread. Cabbage, apple, and toasted pumpkin seeds add a wide range of tastes and textures, while roasted chicken brings heartiness. Topped with uncooked ramen noodles for added crunch, this salad can be refrigerated easily and enjoyed all week long!

INGREDIENTS
For the chicken:
- 1 lb chicken breast (about two boneless and skinless breasts)
- 1 tbsp neutral oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
For the pumpkin seeds:
- 3/4 cup pumpkin seeds
- 2 tsp toasted sesame oil
- 1 tbsp maple syrup
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
For the salad:
- 2 cloves garlic, minced
- 1/2 cup neutral oil
- 1/3 cup rice wine vinegar
- 1 pkg ramen noodles (with the flavoring packet)
- 2 tsp white granulated sugar
- 1/2 tsp kosher salt
- 2 lb cabbage, shredded
- 4 green onions, chopped
- 1 large apple, chopped
INSTRUCTIONS
For the chicken:
- Preheat the oven to 375℉.
- Pat the chicken breasts dry and drizzle them with the oil. Sprinkle with kosher salt and black pepper. Roast in the preheat oven until the chicken is browned and register 165℉, 16-20 minutes. Once roasted, remove the chicken from the oven and set aside to cool.
- Once cooled, shred the chicken into bite-sized pieces.
For the pumpkin seeds:
- In a small skillet, combine the pumpkin seeds, toasted sesame oil, maple syrup, kosher salt, and black pepper. Set the skillet over medium heat and stir. Continue stirring, toasting the pumpkin seeds until they are glazed, 5-8 minutes.
- Once toasted, remove them from the heat and pour them onto parchment paper to cool.
For the salad:
- In a medium bowl, combine the minced garlic, neutral oil, rice wine vinegar, ramen noodle flavor packet, sugar, and kosher salt. Depending on the ramen brand, the level of salt may need to be adjusted. Whisk the dressing together until it is combined.
- To the bowl with the dressing, add the shredded cabbage, shredded chicken, green onion, apple, broken-up ramen noodles, and pumpkin seeds. Mix well and serve immediately.

I love your videos Kaleb always! You are such an inspiration to us folks that follow you. I’m 69 years old now and so happy to have had this life with my family! I was raised in central Illinois and gardening was a huge part of my childhood and early adulthood, I moved here to Arizona in 1981, and have always missed the change of seasons in the Midwest and the good times in the garden with my grandparents. ❤😊😅 I’m so grateful I had that privilege as a kid. You have the ability to always be the same person, kind and positive, willing to keep trying things and never give up! Just like with Kip, you gave him your all and even though I know that was stressful and exhausting, & expensive but you hung in there and saw that through. You are good at everything you do! ❤❤❤

We followed your recipe as written last night. It is simply the best ramen salad we’ve had to date. The flavors were well balanced and it was visually pleasing with all the vibrant colors. I do a Chinese chicken salad sort of like this but i toast my broken up ramen in butter first. Not very healthy but so good! I have saved and used so many of your recipes! My family loves them!

Another delicious recipe, thank you! I had a mix of edamame, cranberries, cashews, and sunflower seeds that I substituted for the pumpkin seeds. It's what I had on hand. This blend wasn't toasted, of course. Also, instead of salt on the chicken, I used a touch of the Ramen seasoning plus added a few dashes of cayenne pepper for a little heat.

Amazing !!!!!! Made this for tonight’s dinner. I did use the red cabbage too just because that’s what I had. I think the surprise was just how GOOD those toasted pumpkin seeds were. That crunch and flavor in the salad was just over the top yummy. I think for fun, the next time I make it, I will use the savoy cabbage. My husband isn’t a huge fan of chicken but it’s just all mixed so he’s not just getting that in a bite. I sautéed some thighs to get a little brown and then slow roasted in the oven with a little DaYaki . Thank you

This looks delicious. I love having salads that eat like a meal. I call them big salads because I make a big batch and have it for a couple days. I use sunflower kernels but I'm going to try the pumpkin seeds. This looks so good, thanks for sharing! 🙂

Kaleb, loved this reminder of how good this salad is ... I always add a bit of soy sauce and oyster sauce to my dressing. Have you ever done that?

I love all your recipes, and this one looks delish! The only thing I'm worried about is the ramen noodle packet. Do they still use MSG in it? If they do, I can't use it as I am allergic. What would you suggest as an alternative?

This does look soooo good and I will definitely make this except not the ramen. I'm wondering if you could suggest an alternative noodle for those who can't have or don't want the wheat flour? I'm thinking some fried glass noodles or Thai crispy rice noodles might be fabulous with it.

I’ve tried everything but stand on my head to print out this recipe. I’ve subscribed, joined, have a password everything and it WILL NOT pull up the recipe to print !!!!! Kind of a screwy website. You video the making of the salad but don’t say how much this how much that so I was relying on the printed recipe. Won’t do it. So I’ll just guess on the dressing. ☹️
