I forgot to comment on this build. So I am late but I have to say I would have loved to known about these hands long ago. I can just see a dial with the stripe pole on it as well and a blue bezel insert. I bet my barber would wear that watch in a heart beat. By the way, my wife is a seamstress and would have loved this as a sewing watch theme. Super job.

Usually, they only come with 3 o'clock or 4 o'clock dial feet. My guess is that the extra set could be for a left-hander. I would just remove any that you don't need.
