Raora's recipe for her pasta. The amount is not really exact, just a speculation based on the picture. Sauce: Red peppers, 2 1/2 pcs Cherry tomato, 100gr or 250gr (adjust to her photo, but more tomato is better i guess?) garlic, 3 cloves Olive oil, as needed. if you really really really didn't want to use olive oil, you can use any cooking oil but mama Raora will banish you into oblivion. Tools: food processor. or mixer. or small blender. Or, if you're SEA friends: Mortar and pestle as our ancestor wishes. Ladle to adding pasta water into sauce and to fish out your pasta. you can use strainer too if you have. sauce pan, boiling pot, and spatula because you're really cooking here. Pasta: Fusili pasta, 250gr (adjust to your portion). mozarella cheese, some blocks so maybe 20gr? adjust to your liking basil leaves, 5gr. adjust to your liking steps: 1. Cut cherry tomato into small pieces. Raora cut 1 tomato into 2, but if you deemed its still kinda big you can cut them more. smaller tomatoes will make them cook faster. Also easier for your hand if you use mortar and pestle. 2. Cut the peppers into roughly the same size as the tomato. no need to be precise imo, they're gonna be mixed anyway later. 3. Boil water, high heat. add salt bit by bit and stir until the water is kinda cloudy. 4. While waiting for water to be boiled, on another stove, olives into the pan. Makes sure it covers the entire pan but dont flood it, just cover it. garlic in, and put on fire, medium heat. 5. Stir garlic once in a while to prevent it from burning, and cook until fragrant or you can smell the nice garlicky smell. 6. Once fragrant, immediately put tomato, peppers, and basil leaves into the pan. mix well, and keep stirrirng. if you feel that its hard to stir or feels rough, add the pasta water with ladle (don't add too much, probably half a ladle at a time). keep doing this until the tomato is soft. Raora said it would take 20 minutes. 7. meanwhile, once the water is boiling, add your fusili pasta. timer 10 minutes so its easier to monitor. also keep an eye on it to prevent it from overflowing, just to be safe. do not cover it with lid. 8. once 10 minutes passed for the pasta, heat off, and fish out the pasta into flat plate to cool it off faster. DO NOT THROW AWAY PASTA WATER, YOU STILL USE IT FOR STIRRING THE SAUCE! Note: when you do this, lower the heat on your sauce pan so it won't burnt. alternatively, just add water and fish out your pasta ASAP. 9. once the tomato is soft, heat off, and throw everything into mixer, or food processor, or mortar and pestle. mix them up roughly, i guess? just to make it into a paste, please. just mix them roughly. 10. Once you done mixing, check your pasta. if its not cooled off yet, give it 5 minutes. in the meantime, you can cut your mozarella or clean up your used cooking utensils, because cleaning is a part of cooking. 11. once the pasta cooled off, add the mozarella, add the sauce, and mix it well. add a pair of basil if there's still any, and enjoy! note: if you only had one stove, no problem. prioritize the pasta cooking since you gonna wait for them to cool off anyway. the most important bits is NOT to burn the sauce. it is super important so put an extra attention to this. Does this easy? yes. Is it takes time? yes it is, its cooking after all. Its a good day-off activity, so you can eat the same thing as your oshi. give it your best.

Cherry tomatoes for your pasta sauce is real. I tried them for my pomodoro sauce recently and I legit like using them more than canned San Marzano. Canned San Marzano can turn out too sour cuz sometimes they use citric acid as a preservative, while fresh cherry tomatoes will offer that sweetness more readily cuz they can reach the required ripeness. Until I secure a decent brand for San Marzanos, I'm a cherry tomato main for my tomato-based sauces.

That's the trick of the Mediterranean diet. You don't need to eat proteins to have proteins. You only need to eat 8 essential amino acids and the body does the rest. No vegetable contains all the 8 essential amino-acids, but if you mix them, you can have the entire set. IE pasta, tomatoes and bellpeppers contains the entire amino acid set (pasta is scarce in lysine, but both tomatoes and bellpeppers are rich of it, for example).
