Potato cake
and vegetables
for 4 people eating
A kilo of cooked potatoes
500 g of mixed vegetables
salt and pepper
bread butter
cheese 50 g
2 eggs
little egg and milk
parsley
First, cook a kilo of potatoes, for convenience, medium-small.
In a comfortable pan, a little butter (or oil) and cook about half a kilo of mixed vegetables, starting with celery, carrots and onions, or other, compliant, and other vegetables, all diced, I used peas, spinach and zucchini.
Cook the vegetables for about 15 minutes over high heat, stirring often, at the end of cooking, salt, pepper and parsley or chives.
Peel and mash the potatoes adding them to the vegetables, add 2 eggs, 50 grams of your favorite cheese to taste, I use diced gruyère. mix well.
A buttered 24 diameter pan, I pass some breadcrumbs and remove the excess, and I fill my pan, with a spatula I make the surface smooth and with the brush I pass a mixture of egg and milk previously prepared, a sprinkling of sesame to taste .
Bake in a preheated oven at 180°c for about 30 minutes.
This potato cake can be eaten hot, cold and reheated the next day, as a side dish or as an aperitif.
