Good morning Sandi- My Grandmother Hazel used whiskey in tea for a bad cold. Otherwise, she was a teetotaler Baptist! And a peach! Gram talked to me all the time about her strategy for surviving The Great Depression. Her #1 advice was : KEEP YOUR LARDER ( PANTRY) FULL !! You are a huge help in motivating me to keep my pantry full during these times. I have been gradually working on both farm pantries since mid March. Sometimes I lose inertia, watch one of your videos, and get myself going again! Thanks for taking the time to share your homesteading experience! ~Diane

My dad put fresh strawberries, sliced fresh peaches/apples and blueberries...sugar and brandy. Put in jars and let it set up on counter top under towel. After 3 months put fruit on dish of ice cream and served brandy for Christmas and New Year with friends. The strawberries turned blue. He kept the fruit and berries whole. The brandy was enough to draw the flavor from the fruit.

I really think it is personal choice. My Grandmother did it so I do it. The batch of vanilla I did after the video I used plastic lids. I know that tin can have a reaction with metal and the rings are tin (not the lid).

Great video! I am going to try making blackberry brandy. Blackberries are really good when you have a cough -- and I only use alcohol for medicinal purposes. I always hope and pray nobody from church sees me when I have alcohol in my shopping cart!!! I also watched your vanilla extract video and am going to try that too! I don't like the artificial vanilla. Thanks and blessings!

I use blue painters tape for marking my jar lids that aren't used in canning. That way I can re-use them.

Hi Jeannie from Scotland here. I absolutely loved your video on the Vanilla Extract and I came straight here to see your wonderful Raspberry Brandy. Can you tell me does this Brandy have a shelf life? What do you do with the pulp? I was imagining the pulp in deserts? I will definitely be keeping an eye on your videos as you're so knowledgeable and down to earth. The only thing I would say is that in most of these videos you all talk of quarts and cups which are US measures. I'm as thick as mince and have to go running around trying to find conversion charts and you never find two the same! Anyway that aside keep up the good work as I'm loving it. x

Sandy, your videos are class act, Love them All!! I was lucky enough to grow up having 2 Gramas & 2 Great Gramas!! They all canned! Their tastiest meatiest tomatoes back then we're to die for! Canning today isn't as hard, depending on what it is, thank God! I want to make this Brandy for Christmas presents this year! Woah it's going to be stout! 👍😁 I'm your newest subscriber probably. I live in Oklahoma. Lucky to have alot of Farmers Markets around here for fresh fruits, vegs, honey, etc! I'll be checking back to watch more of you, your a sweetheart & a Heck of a Teacher dear! I'll sure help you sell them! I have 6 generations from this county, so we know everyone! I also used to work @ the Chamber of Commerce in Edmond Oklahoma. I could sure get you in you in touch with more than 1 Publishing Co! One very good friend in Texas has owned a publishing co for prob 45 yrs! I know A wholeee lot about publishing, plus I used to help publish magazines! I too know abt choices of color or b/w art, # of pgs you might need, costs. I have a friend that has just a big book publishing co. Our daughters went to school together 12 yrs! 😉

Blackberry brandy makes the best cough syrup. It doesn't take much. Just a tablespoon every 4 to 6 hours.

Good morning Miss Sandi! I hope your day has started out well, and will continue just getting better all day long. I stumbled upon your homemade vanilla a little bit ago & just had to watch as I had never seen a recipe for it. I will definately be ordering some vanilla beans very soon. 😉 After looking through the list of videos you have to choose from, I was even more excited, I already knew I wanted to find this video. So you now have a new subscriber in Ohio & I must say it seems to me that you also have a love for homemaking. That has always been what has been near to my heart as well. I always loved doing the things to take care of my family as they grew. Ok, I better get to my question lol. Not only do I have raspberries growing, but I also have strawberries, blueberries & blackberries. Can you give me an idea of about how much sugar I would use with 1 of these other fruits as I would not be using the caramels? Hi Miss Sandy, during the extraction (fermentation?) period, is 3 months the maximum or will it be better aged longer? You mentioned the seeds rotting. I wouldn't want to ruin the Brandy. Also what is the shelf life once strained. Thank you everso. Have a blessed day.

Ok I saw no way to leave a message on the vanilla video Sandy. I need to know how long it has to set before you use it and if vanilla is suppose to eb 65% water 35% alcohol and you are filling the jars completely does that mean that you are using alcohol that is 65/35? I love this idea. Does it need to be stored in a cool dry place and how long can you store it? Carmels - I freeze mine and put them thru the food processor(I do the same with my chocolate chips).

Hi Alexander, I have the vanilla set for 2 years, I use vodka at least 80 proof, no water. I store it in a cool pantry. It will store for years. Great idea with the food processor.

When you freeze the fruit and it thaws , that process breaks down the cell walls and you get more flavor.

Today I watched again your vanilla video because I love to do it from time to time and I checked too about the rasberry brandy video. I dont have my own raspberries. Can i use frozen that I can buy from the supermarket? Can I use other berries? Like fresh strawberries or blackberries?

I like to use boiling water to use but moist people just use their dishwasher on the hottest setting.

We had the final product at a gathering but there were people that didn't want to be shown in a video. It was fantastic, smooth, not syrupy. My raspberries are just not ripening, very late for us.

How strong of a taste is the alcohol? I haven't cooked much with alcohol. I have made beef burgandy with red wine that was very good!

Sandi, have you infused light rum with fruit and spices? It looks delicious and there are fewer carbs in the light rum. I was thinking about a fall taste and scent like apples and blend it with cider and plum.

This looks yummy. How do you freeze your raspberries? I have a wonderful Black Cap raspberry bush. I want to try freezer jam next year & maybe your brandy. I know I line up tomatoes on my cookie sheet after I blanch them & get the skins off. Then I put them in my chest freezer & when frozen bag them up in Zip-Loc bags.

Linda, I simply rinse them, let dry on a cookie sheet with paper towels and throw in the freezer bag. Easy.

Mae, I talked about it in a video. We served it at a large party (Joe's retirement) but some people didn't want to be in a video so I don't have a specific video. It was a tremendous hit!

The ring on canning jars are tin, I don't like that. Since the video, I have changed to just plastic lids.

I would try vodka first. It will be must faster then vanilla beans.

in the vanilla yes, I know people who use grain alcohol. in the brandy recipe probably. Maybe try a small amount first. Thank you

Joy fresh will work also. There is about 2 quarts of raspberries going into that 1/2 gallon mason jar.

It is a hard caramel like Kraft caramels.
