Thanks so much for this video, because I have only made ganache from chocolate and hot cream pour over it. I now have another way to make ganache. On a side note I am still struggling making macaroon, but I am not giving up! Congratulations on all the new and growing subscribers, you deserve it!

You can layer or ice a cake with it, fill macarons or ice cupcakes.

Looks delicious! Do you think it's possible to half / split this recipe into thirds? I'd love to try this ganache as a macaron filling, but 900g white chocolate seems kind of too much :)

Puffiification these proportions are more for a cake. You can definitely divide ingredients by 3.

White 200 grams heavy whipping cream, fold into ganache and you have the perfect filling for your cake :)

How do you get sieves clean. I was thinking about getting one, but was worried they would be difficult to clean.

It depends they type you get. The easiest to clean are the stainless steel ones with a handle and a bowl shape sieve like I have used for the raspberry sauce in this clip. I wash them in hot soapy water as soon as possible after using them. The "crank" type ones are a bit more tricky to clean!

Where do you purchase white chocolate in wafers? The only thing I’m aware of are Candy Melts.

Kitterz many of the couverture chocolates come in buds. You can also use Nestle’s Bakers Melts.

It's not something I have tried with ganache but if you want to try it then add 125g at the very end once it has thickened to piping consistency and beat for around 1 minutes to mix well.
