I think I read somewhere that Paul Giamatti (Drek's voice actor from the reimagining) was actually supposed to be the original voice actor of Drek (it may be his voice in this video) I'm not sure whether it is 100% true, it might be false, but still a fun thing to point out. Also, R.Y.N.O. only has 10 ammo!

Drek sounds almost exactly like he does in the reboot game and movie... I'm sure it's not the same voice actor, but it does sound a bit similar... Really glad they went with Kevin Michael Richardson for the final game, though

I'm certain that the E3 version of Drek's voice is that of Niel Ross (Moneybags and Bentley from Spyro 3), it sure sounds like him and it would make sense since he has that bit of history with Insomniac.

I think Drek was originally voiced by James Arnold Taylor, but they soon changed roles for Kevin Michael Richardson to come on set, and voice the lines instead, making less work for James Arnold Taylor.

Also, on this demo you find the Infobot for Rilgar on Metropolis, whereas on the final version, you would find the Infobot for Planet Eudora in its place. :)

Planet Caldera may have been changed because in 2002 Bethesda released Morrowind, which had a town called Caldera. May have also highlighted "Talos" for them too.

The decoy apperance of Ratchet was the original one by Insomniac games, they showed him to Sony & Sony redesigned his fur, because they thought it looks better. Insomniac was thankful, because they thought that the redesign would bring them closer to japanese audiences & they weren't proud enough of his original fur.

Even on the final version the suck cannon does not suck that robot dogs..I believe this is because they are a lot bugger than the rest "small" enemies in the game.

The original demos are indeed on discs, but you can find rom rips of these practical anywhere with a simple Google search, the videogame archive is a good source for early beta builds and for leaked beta builds who never got a physical demo release.
